Say goodbye to cooking baked potatoes in the oven.  Just one more reason to love your Air Fryer! The thing I hate most about cooking baked potatoes in the oven is the guess work.  Are they done? Is each potato cooked evenly throughout? How do I get the skin crispy without drying out the inside? NOT ANY MORE! This Air Fryer Baked Potato Recipe takes the guess work out of it and your potatoes turn out fabulous every time.  Fail proof, I promise!

Tara’s Tips For The Perfect Air Fryer Baked Potato Every Time:

  • Wash and scrub your potatoes first, then dry them with a towel.  Be sure they are completely dry before poking + spraying them.
  • Poke each potato with a fork a few times. This is super important! Those tiny little holes allow steam to escape the potato instead of  making the potato explode.
  • Spray each potato with avocado or olive oil spray.  I am not a fan of cooking with oil but these need just a light spray to achieve the crispy skin.  You do not need to douse the potatoes in oil.  Save the calories for the toppings!
  • Sprinkle with coarse kosher or sea salt! Yes, the large flakes.  They work best. Don’t skimp and use table salt for this.  It makes a huge difference.
  • Most potatoes are cooked through at 40 minutes.  However, if you happen to get one of those ginormous baked potatoes it might take a few minutes longer.  The way you know they are done is if your fork easily pierces the entire potato without resistance.  Check them at 40 minutes, if this is not the case, cook for 5 minutes longer and check again with a fork, repeating as needed.
  • When finished cooking, immediately remove the potatoes from the air fryer.  Don’t let them sit around in there. Be careful, they will be hot!

 

Topping Ideas for Your Perfect Potatoes

I love my air fried baked potato stuffed with broccoli or other vegetables.  They are equally delicious with simple vegan butter + salt + pepper.  However, I like to make a meal out of mine and the potato is a vessel to carry my toppings 😋. There are so many ways to customize your loaded baked potato. Add chili (my favorite Meatless Chili recipe right here), roasted chickpeas (Buffalo Roasted Chickpeas or Air Fryer Garlic Chickpeas)Roasted Jalapeno Blender Queso (Dairy Free!), or even Tempeh Taco Meat. The possibilities are endless!

Air Fryer Baked Potato Recipe

Making an Air fryer Baked Potato is SO EASY + totally fail-proof. You will get a perfect potato every time with a crispy skin + tender inside cooked evenly through!

Ingredients
  • 2 russet potatoes
  • avocado or olive oil spray
  • coarse kosher or sea salt
Directions
  • Step 1 Preheat air fryer to 400º F.
  • Step 2 Wash and scrub the potatoes. Dry with a towel until completely dry.
  • Step 3 Poke both potatoes with a fork a few times each.
  • Step 4 Spray each potato with just enough oil spray to apply a light coating over the entire skin.
  • Step 5 Sprinkle both sides of each potato with the coarse salt flakes.
  • Step 6 Place potatoes in your air fryer basket and cook at 400º F for 20 minutes. After 20 minutes, carefully open the air fryer basket and flip each potato over. Close the basket + cook for an additional 20 minutes.
  • Step 7 After a full 40 minutes of cook time, test your potatoes to see if they are done. Pierce each one with a fork. The fork will pierce easily without resistance when they are done. If this is not the case, cook in additional 5 minute increments until this is achieved.
  • Step 8 When done cooking, carefully remove the potatoes from air fryer.
  • Step 9 Once cool enough to handle, use knife to cut slit down the center and press down the sides to help the steam escape.
  • Step 10 Apply toppings to taste! Enjoy!
