Oven roasted vegetables are one of my absolute favorite things to eat. I absolutely love the fresh, savory, crunchy taste of a vibrant vegetable roasted to perfection! Pretty much any vegetable will do but asparagus definitely tops the list. This oven roasted asparagus is super easy + you can pop it in the oven while you make the rest of the dinner. You are going to love this one!
Tara’s Tips for Perfect Oven Roasted Asparagus
- I am not a huge fan of using oil, but when it comes to oven roasted asparagus a little goes a long way. If you skip it you won’t yield the same crisp bold flavor. I use unrefined extra virgin olive oil – this is a great choice for these! Not sure about choosing a cooking oil? Read this: How To Choose A Cooking Oil.
- Smash the garlic. Simply peel the garlic clove, place it on a cutting board, and smush it down with the back of a large spoon until it cracks. This lets out just enough of the juices for the asparagus to absorb the flavors while roasting.
- Use lemon! It brings out the flavor and the nutrients of the asparagus. A little drizzle goes a long way.
- Don’t let them overcook! I know you have seen it … asparagus big and small depending on where you buy them and what time of year. So, all those sizes cook differently, just watch them as the 10 minutes approaches. They are done when the ends turn a crisp brown like mine in the photo.
- Salt them. Not a lot, but they do need a little.
- Trim them correctly. Asparagus have a natural ‘breaking point’. Don’t cut the ends! Hold the asparagus ends between fingertips and bend it, it will naturally break 1-2 inches from the bottom leaving you the most flavorful part of the asparagus.
What should you make with your beautiful oven roasted asparagus?
Nothing if that is your thing, they are lovely all by themselves. You could layer them on top of this Breadcrumb Pasta (yum!) or have them alongside a Buffalo Chickpea Veggie Burger, they also p air fabulously with Vegetarian Seitan Turkey Cutlets and Instant Pot Mashed Potatoes.
Oven Roasted Asparagus
Easy, full of flavor, healthy, ready in minutes!
Ingredients
- 1 lb Asparagus (washed and stems trimmed)
- 1 tbsp olive oil (omit if you do not use oil)
- 6 cloves fresh garlic (peeled and smashed)
- 2 tsp lemon juice
- 1 tsp salt
Directions
- Step 1 Preheat oven to 425.
- Step 2 Wash asparagus, trim ends by bending the asparagus and the end should automatically break off at the appropriate spot for each individual stalk (approximately 1-2 inches will break off).
- Step 3 Place asparagus, oil, salt, smashed garlic, and lemon in a large mixing bowl and toss until all asparagus are fully coated. To ‘smash’ garlic, peel the garlic clove, place on a cutting board and smush it down with the back of a large spoon until it cracks.
- Step 4 Transfer to sheet pan and bake in 425 degree oven for 10 minutes or until ends are crisp. Asparagus size vary so cook time may vary, just watch them and they are done when the ends are slighlty dark brown. Serve immediately with additional lemon to taste. Enjoy!
