Vegan quiche, yes please! This Just EGG Vegan Zucchini Quiche is dairy-free, ready in one hour, and so delicious! Zucchini, onions, dairy-free cheddar shreds, Just EGG, a few dry spices, and a frozen pie crust. You will be so happy to have this on your plate when it comes out of the oven!
Tara’s Tips for Perfect JUST Egg Zucchini & Cheese Vegan Quiche
Cheese
- I used Violife vegan cheddar shreds for my quiche. if you are not vegan, you can use shredded cheddar or Swiss cheese.
JUST Egg
- Bakes perfectly! Just like eggs! One whole chicken egg is equivalent to approximately 3-4 tablespoons or 1.5-2 ounces of JUST Egg liquid. So, I use 8 ounces in this quiche recipe. If you are vegetarian, not vegan, and you eat eggs, you can use 4 whole eggs.
Pie Crust
- For my vegan quiche, I use a frozen pie crust from Whole Foods. Any pie crust will work here – store-bought or homemade.
Onions
- To get the onions finely chopped, use a food processor or electric mini chopper, cuts time too! Alternatively, you can slice them thin.
Milk
- I prefer to unsweetened Oatly Oat Milk. For this recipe, I use the blue container. Any dairy or non-dairy milk will work but make sure it is plain, unsweetened.
Zucchini
- I use the long, thin, dark green zucchini in this recipe (sometimes referred to as black beauty zucchini). I have not tested this recipe using other zucchini.
Baking
- This zucchini & cheese quiche takes one full hour + 15 minutes in the oven. You will know when it is done when the center is not liquid and has set to a solid form.

JUST Egg Vegan Zucchini Quiche
Vegan quiche, yes please! This Just EGG Vegan Zucchini Quiche is dairy-free, ready in one hour, and so delicious.
Ingredients
- One 10-inch pie crust
- 1 tsp vegan butter
- ½ cup finely chopped onion
- 1 zucchini sliced thin
- 1 tsp salt
- 1 cup Just EGG liquid
- 3/4 cup milk
- 2 tbsp all-purpose flour
- ½ tsp black pepper
- ¼ tsp thyme
- ½ tsp dried mustard powder
- 1 ½ cups vegan cheddar shreds
Directions
- Step 1 Preheat oven to 350 degrees F
- Step 2 Heat butter in a non-stick pan over medium-high heat. Once hot, add onions, sprinkle with 1 tsp salt, sauté for 3-5 minutes or until the onions are translucent.
- Step 3 Next, add zucchini slices, continue to sauté until zucchini soften. Turn off heat, set aside.
- Step 4 Pour Just EGG, milk, flour, and dry spices in a blender and blend for 20 seconds.
- Step 5 Sprinkle 1 cup of the cheddar shreds on the bottom of the pie crust, next, layer the onions and zucchini in the pie crust, then, pour the Just EGG mixture over that. Finally, sprinkle the remaining ½ cup of the cheddar shreds over the top, sprinkle a pinch of salt and pepper on top.
- Step 6 Bake in a 350-degree oven for 75 minutes or until your quiche is solid (not liquidy) in the center.
- Step 7 Let sit for 5 minutes, cut into slices, and enjoy!
