This Vegan Pad Thai is super easy + just spiced enough with a hint of sweetness + NO FISH SAUCE! Hooray for Vegan Pad Thai!
When we walk in to our local Thai restaurant, they say hello to us and then our Pad Thai arrives. Safe to say we frequent that restaurant a lot. One might also say we LOVE Vegan Pad Thai! Most Pad Thai recipes include fish or oyster sauce. So, it is rare for us to be able to order it in a restaurant. That makes it even harder to recreate this fabulous dish at home. I have tested this one multiple times and have come up with a simple base recipe. You can add any veggies you like and use any noodles you like. Traditionally, Pad Thai is made with a thin rice noodle, which is what I use. I also grill up some tofu and add in a few veggies. Seriously, I could eat Vegan Pad Thai every single day of my life if. I could.
Let’s Talk Tofu
If you are adding tofu into your Vegan Pad Thai, you must cook it first. I prefer to Bake or Air Fry my tofu. My recipes here are a good place to start: Crispy Oven Baked Tofu with No Oil or Crispy No Oil Air Fryer Tofu.
You can also add in any veggies you love including carrots, mushrooms, or broccoli! Hope you love it!
Vegan Pad Thai
This Vegan Pad Thai is super easy + just spiced enough with a hint of sweetness + NO FISH SAUCE! Hooray for Vegan Pad Thai!
Ingredients
- 1 package of rice or ramen noodles
- 1/4 cup Vegetable Broth
- 1 tbsp coconut palm sugar
- 2 tbsp tamarind concentrate
- 3 tbsp soy sauce or liquid aminos
- 1 tsp red chili pepper powder
- yellow or white onion: one medium size onion sliced thin
- 1 tbsp garlic paste or minced garlic
- 1 cup scallions sliced thin
- 2 cups bean sprouts
Directions
- Step 1 Mix vegetable broth, sugar, tamarind, soy sauce or liquid aminos, and red chili pepper powder in a jar, shake well, and set aside.
- Step 2 Cook noodles according to package directions, transfer to colander, run under cold water, and set aside.
- Step 3 Place sliced onion in a medium non stick pan and saute over medium heat until translucent. You can saute in sesame oil if you use oil. If not sprinkle onions with a little salt and one tsp water at a time to prevent sticking.
- Step 4 Once onions are translucent, add the garlic and saute for another minute until garlic becomes fragrant.
- Step 5 Add sauce to the pan and continue to cook for 1 minute.
- Step 6 Add noodles and toss to coat. Add scallions and cook for an additional 1-2 minutes. At this time add in bean sprouts and any cooked tofu you might be using.
- Step 7 Top with additional red chili pepper powder, and crushed peanuts to taste.
