Super easy + NO MAYO required in making this vegan-ized version of traditional broccoli salad π₯ Perfect for lunch, brunch, meal prep, or as a quick dinner side dish. This Vegan Broccoli Salad takes only a few minutes to make and is SO GOOD!
No Mayo? Yep!
I am always fascinated by finding plant-based ways to replace traditional favorites. Today it happens to be mayonnaise. Who would have ever thought that soaking a few little cashews and giving them some pizzazz would turn them into the perfect salad dressing π€© Soaked + blended cashews are the key to giving this vegan broccoli salad its dreamy, creamy dressing.
Why you should be eating LOTS of broccoli:
- high in antioxidants
- is an anti-inflammatory food
- high in fiber
- helps to lower LDL cholesterol
- contains Sulforaphane which might slow the aging process (still being researched but maybe is good enough for me to eat more!)
- high in calcium, vitamin K and phosphorus
- only 30 calories per cup!!!!

Tara’s Tips for Perfect Vegan Broccoli Salad
- This salad is perfect to make ahead and toss together when ready to serve. Perfect for meal prep or weekend brunch! Not just a summer salad!!!!
- Substitute dried cranberries or raisins for the grapes if you prefer.
- Swap out the sunflower seeds for slivered almonds, or pepitas, or even crushed walnuts. All fabulous in this salad.
- Don’t use frozen broccoli, will not work here.
- If you do not have a high powered blender, you will need to soak the cashews for additional time. 10 minutes is all you need if your blender is high power. Soak your cashews for an hour if you do not.
- Chop everything small/bite-size. It is SO worth it!

Vegan Broccoli Salad
No Mayo Vegan Broccoli Salad! Broccoli + Grapes + Onions topped with completely vegan dressing. YUM!
Ingredients
- For The Salad:
- 1 head Fresh Broccoli (washed + chopped into florets)
- 1 cup red grapes (washed + cut in half)
- 3/4 cup diced red onion
- 3/4 cup sunflower seeds or slivered almonds or pepitas or crushed walnuts
- For The Dressing:
- 1 cup raw unsalted cashews
- 2 tbsp white or apple cider vinegar
- 2 tsp garlic paste
- 1/2 tsp salt
- 1/4 tsp black pepper
Directions
- Step 1 Place cashews in a bowl, add enough hot water to the bowl to cover the cashews, cover and let soak for 10 minutes.
- Step 2 Drain cashews, add to high speed blender with vinegar, garlic paste, salt, and pepper. Blend until smooth. Add water as needed if your dressing is too thick.
- Step 3 Add all salad ingredients into a large bowl, add dressing and stir until your salad is fully coated with dressing.
- Step 4 Eat or serve immediately or refrigerate until ready. Enjoy!
