What Will You Need to Make this Vegan Holiday Roast?
- mushrooms
- oats
- vital wheat gluten
- fresh garlic
- nut butter
- vegetable broth
- soy sauce
- a few dry spices
- parchment paper, aluminum foil, a baking sheet, and an oven
Tara’s Tips for Perfect Thanksgiving Seitan Roast
- First + most important, allow yourself enough time to make this, it takes 90 minutes in the oven plus the time to prepare.
- Second, finely chop the mushrooms, I run them through my food processor or chopper to make it easier. Compared to chopping by hand you will save lots of time!
- Third, do not over-knead seitan! Once you add the vital wheat gluten, be quick + efficient with the mixing. The more you manipulate the batter after the wheat gluten is mixed in, the more of a rubbery texture you get on your seitan. For this reason, you want to mix it, knead it a few times + shape into a loaf swiftly.
- Either peanut butter or almond butter will Β work for the nut butter in this recipe.
- I use Better than Bullion No Beef broth base. However, No Chicken Base or Vegetable base will also work for the broth.
- The goal with the parchment paper + foil is to make a pouch that your loaf will steam inside of. So, first wrap the parchment paper like you are wrapping a gift, after that, close one piece of foil over, then the second rolling + pinching the long sides of the loaf to close the pouch.
- Slice this roast as thin or thick as you prefer. Coupled with some amazing side dishes, this is the perfect holiday roast!

Thanksgiving Seitan Roast
Homemade seitan roast perfect for a vegan thanksgiving meal, and above all is super yummy!.
Ingredients
- 1/2 cup organic old fashioned oats
- 1/4 cup nutritional yeast
- 2 cups vital wheat gluten
- 1/4 tsp black pepper
- 1 tsp of each of the following: salt, onion powder or granules, thyme, sage
- 16 oz mushrooms
- 3 cloves finely minced garlic
- 1 cup vegetable broth
- 3 tbsp soy sauce or liquid aminos
- 1 tbsp almond or peanut butter
Directions
- Step 1 Preheat oven to 400 degrees F.
- Step 2 Combine all dry ingredients and spices in a medium bowl and stir to combine, set aside.
- Step 3 Place washed mushrooms in a food processor or chopper and chop until finely chopped, transfer to a large bowl, add minced garlic, set aside.
- Step 4 In a separate bowl, whisk together the broth, soy sauce, and nut butter, once whisked together pour the mixture over the mushrooms and give everything a good stir until the mushrooms are coated in the broth mixture.
- Step 5 Next, gently stir the dry ingredients in with the mushroom mixture, you will likely need to use your hands and knead together until fully mixed with no dry areas, being careful not to over-knead. Shape into a loaf.
- Step 6 Cut 2 pieces of aluminum foil (each approximately 22 inches long), place them on top of each other staggered by a few inches. On top of the foils, place one piece of parchment paper (cut approximately 20 inches long). Transfer seitan loaf to the parchment paper. Wrap your loaf tightly in the parchment paper first, then, wrap it in the foil by folding the long ends of the foil in, repeat with the second foil, then fold the short ends in, roll and pinch the ends of the foil to make a sealed packet for your loaf. You are sealing the parchment paper wrapped loaf in the foil, see body of post for photos.
- Step 7 Transfer foil wrapped loaf to a baking sheet or pan and bake in a 400 degree oven for 30 minutes, flip your loaf over, bake an additional 30 minutes, turn over again and bake for 30 more minutes.
- Step 8 Remove from oven and let sit for 5 minutes before removing from foil packet and slicing.
- Step 9 Top with gravy, slice, and enjoy! In the event that you have leftovers, they can be kept in glass container for 3-5 days and after that, reheated in the microwave.
