Why Do We Love This Spinach Mushroom Quinoa?
If you are looking for a new way to incorporate more unrefined grains into your routine, you have come to the right place. Quinoa is SO good for you. It is also a perfect replacement for white rice, noodles, or even pasta. However, cooking it can get SO boring. We love this recipe so much because it comes together super quick. First you start with cooked quinoa, second you heat onions + garlic with a little salt (NO OIL!). After that, the mushrooms get to join the party, and finally the spinach gets tossed in to wilt while the rest of the ingredients heat through. Done! I told you it was easy!
Above all, this bowl of awesomeness is packed with protein + fiber + veggies. What is not included? Refined grains, sugars, oil, or saturated fat! In addition, this is gluten-free, whole food, plant-based + vegan! 🙌🏻

Spinach Mushroom Quinoa
This is your new go-to for a healthy + high protein + plant-based side dish. Also perfect for meal prep!
Ingredients
- 4 cups cooked quinoa
- 3 cups diced onions
- 2 tbsp minced garlic
- 2 tsp salt
- 3 cups sliced mushrooms
- 5 ounce bag of fresh (not frozen) spinach leaves
- red pepper flakes (optional for topping/spice to taste)
Directions
- Step 1 Place onions in a non-stick pan, sprinkle with 2 tsp salt and heat over medium heat for 3 minutes or until fragrant, stirring frequently. If the onions stick to the pan, add one tablespoon water at a time.
- Step 2 Add garlic and cook over medium heat for an additional 2 minutes, stir intermittently.
- Step 3 Fold in the mushrooms and lower heat to medium, place cover on and cook for 2 minutes or until mushrooms begin to soften. Remove cover and stir.
- Step 4 Toss in the cooked quinoa and cook for 2 minutes.
- Step 5 Turn off the heat and fold in the spinach. Gently stir until the spinach wilts. Check salt level, add red pepper flakes to taste.
- Step 6 Store in a glass container in the refrigerator for up to one week or divide evenly into containers for meal prep. Enjoy!
