No Yeast, no boiling, no fuss! This Spinach Florentine Bagel Copycat Einstein Bros is spot on! EXACTLY like the original! These bagels are made with 2 simple ingredients: yogurt + self-rising flour. Air fry for 10 minutes + top with a spinach + garlic + cheese mixture. You then have yourself a homemade bagel in no time at all! I made these with unsweetened, vegan, oat milk yogurt and vegan cheese, but they are equally as awesome with nonfat Greek yogurt and dairy cheese as well!
Tara’s Tips For Making A Spinach Florentine Bagel Copycat Einstein Bros style:
- Use fresh spinach!
- Roughly chop the spinach, sprinkle with garlic powder, spray with a little olive oil spray (if you use oil), sauté until wilted, add your dairy or vegan cheese, heat until melted, done!
- As pictured, I used Daiya non-dairy mozzarella shreds, they melt perfectly! Use any dairy or vegan mozzarella cheese you like!
- Make into a sandwich, as a burger bun, or simply spread on your favorite butter or schmear.
- Yogurt: I used plain, unsweetened, oat milk yogurt but if you are not vegan, use any plain, unsweetened, nonfat Greek yogurt.
- Self-rising flour. Not optional! You must have the self-rising kind to make these work!
- Kneading: by hand or in a stand mixer are both options. They do not need much kneading. 1-2 minutes is all it takes!

Spinach Florentine Bagel Copycat Einstein Bros
Quick + easy! These Spinach Florentine Bagels are JUST LIKE the original Einstein Bros version!
Ingredients
- 1cup self rising flour
- 1 cup yogurt (I used Nancy's vegan plain oat milk yogurt, can use plain nonfat Greek yogurt)
- 1 cup fresh spinach leaves (roughly chopped)
- garlic granules or powder - 1 tbsp
- 1/4 cup shredded mozzarella or vegan mozzarella cheesy shreds
- olive oil spray (optional/omit if you don't use oil)
Directions
- Step 1 Place yogurt + flour in a large bowl and gently stir until combined.
- Step 2 Knead dough on a clean + floured surface for 1-2 minutes or until a soft dough ball has formed. Alternatively, knead using the dough hook of a stand mixer for 1 minute on low speed.
- Step 3 Divide dough into 4 equal portions. Roll each piece into an 8 inch rope shape, then attach the ends to create a circle/bagel shape.
- Step 4 Preheat air fryer to 350 degrees F.
- Step 5 If you use oil, you can opt to lightly spray the inside tray of your air fryer to prevent any sticking.
- Step 6 Place bagels into air fryer basket. May need to be done in batches. Air fry for 7 minutes.
- Step 7 While bagels air fry, heat a small non-stick skillet over medium heat, add chopped spinach (give the spinach a light spray of olive oil if you use oil), sprinkle with garlic powder, sauté over medium heat until spinach is wilted. Turn off the heat, sprinkle the spinach with shredded cheese, stir, place cover on pan and leave on burner with burner turned off until cheese melts.
- Step 8 When 7 minutes is up on air fryer, top each bagel with spinach-mozzarella mixture + return to air fryer. Air fry at 350 degrees F for an additional 4 minutes or until lightly golden brown and puffed up. Carefully remove from air fryer and allow to cool before slicing. Enjoy!

I love the spinach Florentine bagel at Einstien Bro’s. I tried to duplicate the flavor by using the old methods and never could. I inquired once with the baker and he told me that they use potatoe bagel. Can’t find that anywhere. However, I love your recipe and the simplicity of it. There’s actually more protein in your recipe and less additives than enstiens. Thank you so much. You nailed the flavor and I love it!
