I have been on a mission to make the perfect pizza at home. Pizza that doesn’t come out of a box or left on the porch from a delivery. Today I bring you my latest creation. Roasted Vegetable Pizza with homemade whole wheat pizza crust. The best part? The crust is made of a no rise dough! You are welcome! The dinner question has been answered with this quick, delicious, healthy, family-friendly recipe.
Pizza Ready in Under an Hour!
You do not need to plan ahead and make the dough the day before for this crust. The recipe instructions are written to use whole wheat flour. If you prefer, you can use all purpose flour. Either way, it still requires no rise, yes, it is true. Mix, knead, bake. That’s it. By hand or in a stand mixer, you choose, they both work here.
Oven Roasted Vegetables
You can change up the veggies if you like by adding mushrooms, broccoli, or cauliflower. I would leave in the onions and garlic if you have them on hand, it adds to the flavor profile. Use oil if you like. It is not a deal breaker if you are oil-free. Simply leave it out or give your veggies a light spray of olive oil, that is what I do!

* If you don’t want to make the dough, use a pre-made dough, works great in a pinch.

Roasted Vegetable Pizza
Oven-Roasted vegetables browned in the oven to perfection over healthy, whole grain, no-rise pizza dough!
Ingredients
- For the Roasted Vegetables:
- yellow + green zucchini: one of each, sliced thin
- 1 red onion, peeled and sliced
- 5 cloves of fresh garlic, peeled and sliced
- olive oil spray
- 1/2 tsp salt + black pepper
- 1 tsp Italian herb seasoning
- For the Whole Wheat Pizza Dough:
- 2 cups whole wheat flour
- 1 1/4 oz package of active dry yeast
- 1 tsp sugar
- 3/4 tsp salt
- 2/3 cup warm water (approx 100 degrees F)
- 1 tbsp olive oil
- 1 cup vegan or dairy cheese + 1 cup marinara sauce
Directions
- Step 1 For the Vegetables:
- Step 2 Heat oven to 425 degrees F.
- Step 3 Place vegetables in a large bowl, drizzle or spray with olive oil, add all spices, mix.
- Step 4 Spread vegetables on a silicone lined baking sheet.
- Step 5 Roast in 425 degree oven for 15 minutes or until golden brown with crisped edges. When browned, remove from oven and set aside.
- Step 6 Whole Wheat Pizza Dough:
- Step 7 In a large bowl combine 1 cup of flour, yeast, sugar, salt, mix until combined then add oil, stir for about a minute until all combined.
- Step 8 Gradually add in the other cup of flour, I use my hands to mix together until it becomes a soft ball of dough.
- Step 9 On a clean, floured surface, knead dough for 4 minutes until smooth or use a stand mixer.
- Step 10 Roll dough out onto a greased pan.
- Step 11 Bake in 425 degree oven without toppings for 10 minutes, remove from oven.
- Step 12 Spread sauce and cheese evenly over dough, return to oven for 3-4 minutes or until cheese melts but does not brown, remove from oven. .
- Step 13 Add veggies and more cheese to taste, return to oven for 3-5 more minutes or until golden brown. Remove from oven, cut and serve. Enjoy!
