Tara’s Tips for Perfect Roasted Jalapeno Blender Queso:
- Roasting jalapeΓ±os takes time, I know, but don’t skip it!
- Peel the skin off of the jalapeΓ±os, cut the stem off, but you don’t need to take the seeds out. Be careful! Wash your hands really well with soap + water after or wear gloves to do this.
- Soak your cashews in hot water first. If you don’t plan ahead on this, just soak them while your jalapeΓ±os roast. They don’t need much time especially if you have a high powered blender.
- Do not freeze this. It will not maintain its consistency. Refrigerate any that you do not use and microwave when ready but unfortunately this one is not freezer-friendly.
Let’s talk about the peppers …
- Start with one jalapeΓ±o! Taste test after you are done blending. You can always add a sprinkle of red pepper flakes if you want more heat or nutritional yeast if you feel like it’s not cheesy enough. Truth be told … I use 2 (sometimes 3) jalapeΓ±os because we like this really spicy πΆ!

Nachos! With Corn Salsa + Guacamole + Black Beans, with a side of Mexican Cauliflower Rice, or drizzle it over Mexican Jackfruit.
Roasted JalapeΓ±o Blender Queso
Easy + Dairy Free! Make this 5-Ingredient Roasted JalapeΓ±o Blender Queso with Cashews + Nutritional Yeast + JalapeΓ±os + Garlic + Cumin! YUM!
Ingredients
- 1 cup whole unsalted cashews
- 1-2 jalapeΓ±os
- 2 tsp garlic powder
- 1 tsp salt
- 1 tbsp nutritional yeast
- 1 tsp cumin powder
- 3/4 water - plus more for blending as needed
Directions
- Step 1 Soak cashews in hot water for 30 minutes.
- Step 2 Preheat oven to 475 degrees.
- Step 3 Place jalapeΓ±os on a baking sheet lined with aluminum foil. When oven is preheated, roast jalapeΓ±os in 475 degree oven for 10 minutes or until the skin gets brown and bubbly, flipping over once during roasting.
- Step 4 Remove from oven and set aside to cool. Once cool, peel off skin, and cut off stem. Wash hands thoroughly after or wear gloves during this step.
- Step 5 Drain water from soaking cashews.
- Step 6 Place cashews, jalapeΓ±os, and remaining ingredients into a high powered blender. Add more water as needed to achieve the queso-like consistency.
- Step 7 Thatβs it! Enjoy!
