I absolutely LOVE pumpkin season! Baking with pumpkin is all things fall wrapped into one little square of awesomeness! These Pumpkin Oat Bars are vegan + gluten free, dairy-free, egg-free, and still taste SO GOOD!
Tara’s Tips For Perfect
Vegan + Gluten Free Pumpkin Oat Bars:
- Canned or fresh cooked pumpkin puree both work here. Be careful not to use canned pumpkin pie.
- Do not overmix the batter! It will become VERY gooey and the consistency of the bars will be all wrong.
- Be sure to grease the pan or line it with parchment paper to prevent sticking.
- Sugar options include organic cane sugar or raw turbinado sugar. I have not tested this recipe with any other sugars.
- To keep these pumpkin oat bars vegan + gluten free, be sure to look for gluten free on the packaging of your oats. Be sure to use old fashioned rolled oats not the steel cut kind or instant! Organic is best if you can.
- Optional mix-ins: 1/4 cup chocolate chips, chopped walnuts, pepitas, slivered almonds.
- Topping ideas: melted chocolate chips or peanut butter, crushed peanuts or pepitas.

Pumpkin Oat Bars (Vegan & Gluten Free)
These Pumpkin Oat Bars are a vegan + gluten free + SUPER delish! Easy + ready in under 30 minutes!
Ingredients
- 1/2 cup pumpkin puree
- 1/4 cup runny/smooth peanut or almond butter
- 1 tbsp vanilla extract
- 3/4 cup oat milk
- 1/2 cup sugar of choice
- 1 cup oat flour
- 1 1/2 cup old fashioned rolled oats (not steel cut, not quick cooking)
- 1 tbsp pumpkin pie spice
- 1/2 tsp salt
- 1/2 tsp baking powder
- Optional mix-ins: 1/4 cup chocolate chips, chopped walnuts, pepitas, slivered almonds.
Directions
- Step 1 Preheat oven to 350 degrees F.
- Step 2 Grease an 8×8 baking pan or line with parchment paper.
- Step 3 In one bowl, or stand mixer, mix all wet ingredients until fully combined.
- Step 4 In a separate bowl, combine all dry ingredients. Once combined, add the dry ingredients to the wet and mix until incorporated.
- Step 5 Pour batter into prepared baking pan. Bake for 25 minutes or until the edges are slightly golden brown. Do not overbake these, they will be dry!
- Step 6 Top with drizzled nut butter, melted chocolate, or both.
- Step 7 Cut into squares and enjoy!
