Tara’s Tips for Perfect Oil-Free Thai Cucumber Salad:
Cucumbers
- I used Kirby cucumbers in the photos you see here. These are my favorite kind + widely available here in Florida. However, this salad is equally as delicious with English cucumbers. If you choose to use garden cucumbers or any variation with lots of seeds, consider taking out the center portion with the seeds for this recipe as it is meant to be thin, light, and crisp.
Vinegar
- Options are white vinegar or apple cider vinegar. You could also use half Mirin to up your Asian-style flavors here.
Onion
- Red onion all the way in this one! Sliced super thin, on a mandolin if you have one!
Sugar
- Options are turbinado sugar, coconut palm sugar, or organic cane sugar.
Toppings
- Red pepper flakes, crushed peanuts, thinly sliced green onions.
Meal Prepping?
- Cut your veggies + store separately from the dressing. Apply dressing right before you are ready to eat.

The perfect Asian-inspired salad, ready in minutes without fish sauce or oil!
Ingredients
- 6 cups sliced cucumbers
- 1 red onion - sliced thin
- 1/4 cup vinegar (white or apple cider vinegar)
- 2 tsp garlic powder
- 1/4 cup sugar (white, turbinado, or coconut palm sugar)
- 1 1/2 tsp salt (more to taste)
Directions
- Step 1 Combine all dressing ingredients in a glass jar and shake well until fully combined.
- Step 2 Place cucumbers and onions in a bowl, pour dressing over top when ready to eat, mix well, top with crushed peanuts, red pepper flakes, sliced green onions, salt to taste.
- Step 3 Enjoy!
