This eggless cauliflower pizza crust is gluten-free, egg-free, and dairy-free. So easy to make AND super healthy AND super yummy! All that in a pizza? YES!
Let’s Talk Cauliflower Rice
Cauliflower rice is widely available in the freezer section of grocery stores. I buy a ginormous bag at Costco but you can really find it in any grocery store. I don’t rice my own cauliflower. For this recipe, the frozen bag of already riced cauliflower will do. Firstly, let it thaw out. Secondly, squeeze lots and lots of water out. The photo above started out as 6 cups of frozen cauliflower rice that I thawed and wrapped in a cheese cloth to press the water out. Finally, after ALL the water is out, you get one cup like mine in the photo. Most importantly, the more water you take out the more crispy your crust will be. Trust me, it is worth it.
Egg-Free Crust Perfection
This crust really is not difficult to make. The hardest part is getting all of the water out of the cauliflower. After that just mix everything up, shape into a dough and bake! You can even freeze this crust (uncooked). After that, you can have an extra one on hand for a busy weeknight.
How Is This Cauliflower Crust Egg-Free?
Flax! Easy!!! Just mix your flax with water and set aside to create a jelly-like consistency. This mixture behaves like an egg in your crust binding the flour and the cauliflower together. Similarly, I use flax eggs in lots of my recipes and it works fabulously!
Topping Ideas For Your New Favorite Pizza:
I used vegan cheese and I made a quick batch of Three Ingredient Tomato Sauce. Alternatively, you could top this vegan cauliflower crust with Meatless Marinara Sauce and your Air Fryer Broccoli. Olives, jalapenos, sliced tomatoes, all work well too. Just be careful and don’t use anything that is too watery because your crust will get soggy.

Eggless Cauliflower Pizza Crust
No eggs? No problem! Now you can make homemade cauliflower pizza crust that is healthy and crispy and yummy!
Ingredients
- 6 cups frozen cauliflower rice (yeilds 1 cup cauliflower rice when water squeezed out)
- 2 1/2 tbsp ground flax
- 1/4 cup water
- 1/2 cup oat flour (can sub whole wheat, all purpose, or almond flour)
- 1 tsp salt
- Toppings of choice: 1/2 cup marinara sauce, 1/4 cup pesto, 1 cup veggies, 1 cup shredded dairy or vegan cheese.
Directions
- Step 1 Preheat the oven to 400 degrees
- Step 2 Thaw frozen cauliflower rice in your microwave or leave out of freezer for 1-2 hours to thaw on its own.
- Step 3 Mix ground flax and water in a small bowl and set aside to form a gel.
- Step 4 Meanhwhile, transfer the thawed cauliflower rice to the center of a thin towel or cheese cloth. Squeeze the rice, removing all of the water from the cauliflower. There will be a lot of water but remember the more water you get out during this step, the crispier your crust will turn out. You should yield about one cup of cauliflower rice after this step.
- Step 5 Transfer the drained cauliflower to a large bowl, fold in flour, flax egg, and salt.
- Step 6 Gently stir until well combined using your clean hands as needed. It will form a sticky ball.
- Step 7 Place your dough ball in the center of a piece of parchment paper, place another one on top and roll your dough into a thin pizza shape (square, oval, or rectangle).
- Step 8 Transfer to your pizza stone or pizza pan leaving the crust to cook on the parchment paper.
- Step 9 Bake in a 400 degree oven for 20 minutes or until your dough is dry to the touch/not sticky and has a light golden brown color.
- Step 10 Carefully remove from oven and add your toppings. Return pizza to oven and bake an additional 5-10 minutes or until your toppings are cooked/hot/melted.
- Step 11 Serve or eat immediately. Leftovers can be stored in an airtight container for up to 7 days.
