Easy Poha Chivda (Baked not Fried!)

Homemade snacks served with tea are a regular tradition in an Indian home. These snacks are typically a little spicy, salty, and often have a variety of lentils, or nuts, or raisins in the mix. Something similar to American trail mix. Chivda is a traditional Indian snack made with poha flakes while other similar snacks are made with cereals or even oats. More often than not, these snacks are deep fried. Although these snacks are extremely delicious when fried, the frying makes them high in calories and fat from the excess oils. This recipe for Easy Poha Chivda has all of the flavor and crunch but is baked not fried! SO GOOD! πŸ‘

What is Poha?

  • Rice that has been washed, drained, pounded, and flattened into a flake
  • Gluten Free
  • Inexpensive
  • High in fiber
  • A carbohydrate with a low glycemic index
  • High in Iron
  • Pair it with nuts or other plant-based protein and you have yourself a meal!
  • Super delicious to have for breakfast, brunch, or a snack.

Tara’s Tips for Perfect + Easy Baked Poha ChivdaΒ 

  • Roast your poha flakes until they get crisped not brown. Mine take 10 minutes at 350 degrees but your oven might be different so check them after 10 minutes.
  • Adjust your spices, add more salt or red pepper to your taste preference. We like ours spicy so I add an extra 1/4 teaspoon of pepper.
  • Use thin poha flakes. They work better in this snack than the thick flakes and roast easier. You can find poha in any Indian grocery store.
  • If you don’t have golden raisins, any raisins will do.Β 
  • Everyone will love this easy poha chivda so double or triple the recipe if you want to keep leftovers around but don’t double the salt. Taste first and add salt as needed.
  • Use raw nuts. They absorb the flavors nicely.
  • Mix it up! Don’t like cashews? We like peanuts and cashews so we use both but you can use only peanuts or add slivered almonds if you like.
  • I don’t add sugar to mine but a lot of people do. The raisins are enough sweetness for us but if you like a little extra sweetness, sprinkle some sugar over the top at the end.

Easy Poha Chivda (Baked not Fried!)

This Easy Poha Chivda is baked not fried! Ready in 15 minutes + only uses a few teaspoons of oil. A traditional sweet + spicy Indian snack made healthy + vegan + gluten free!

Ingredients
  • 1 cup poha flakes
  • 1/4 cup raw peanuts
  • 1/4 cup raw whole cashews
  • 2 tsp avocado oil or oil spray
  • 10 curry leaves
  • 1/4 tsp ground turmeric powder
  • 1/4 tsp ground red pepper powder (more to taste)
  • 1/2 tsp salt (more to taste)
  • 1 tsp sugar (optional, to taste)
  • 1/4 cup golden raisins
Directions
  • Step 1 Preheat oven to 350 degrees.
  • Step 2 Place poha on a parchment paper or silicone baking mat lined baking tray in a single layer. Bake for 10 minutes, remove from oven and set aside. The poha flakes will remain white but will be crispy.
  • Step 3 Place peanuts and cashews on a baking tray and bake in 250 degree oven for 5 minutes or until golden brown, remove from oven, set aside.
  • Step 4 Heat oil on medium heat in a small pan used to temper the spices. If you are using oil spray instead of oil, simply spray the pan. Once the oil is hot, add raisins, allow to sizzle and swell, remove from pan with a slotted spoon, and place on a paper towel lined plate.
  • Step 5 In the same pan, add curry leaves, turmeric, red pepper powder, and salt, heat over low heat, give the mixture a few gentle stirs with a spatula, turn off heat when leaves look crisped. Only takes about one minute.
  • Step 6 Combine poha, nuts, and raisins in a medium bowl. Pour tempered spices over the top and gently mix until each poha flake is coated with the spice mixture. Serve with tea or this is simply delicious on its own! Store any leftovers on an airtight glass container.
