My mother texted me yesterday reminding me to not forget about the cranberries for Thanksgiving.Β  Oh how I would love to forget the cranberries on Thanksgiving. Those jiggly purple wanna be cranberries from a can 😝.Β  Not this year. This year the cranberries get a makeover with my new recipe for Cranberry Spinach Salad πŸ‘

This Cranberry Spinach Salad is packed with protein, iron, vitamins, and heart-healthy fats.Β  In comparison to its jiggly, cranberry in a can counterpart, it isn’t packed with is artificial colors, sugar, and syrups. You decide for yourself.Β  I’m going with my new version on cranberry this year for Thanksgiving. The best ever cranberry spinach salad with slivered almonds + oh so yummy dressing!

Tara’s Tips For Perfect Cranberry Spinach Salad:

  • You can toss this one together in minutes! No chopping! Use fresh spinach leaves, not frozen.
  • For the cranberries, use the dried or freeze dried version, doesn’t work with fresh ones.
  • If you are looking to do something ahead of time, make the dressing in a jar, shake it up, and store it in the refrigerator until you are ready.Β  You can have the spinach with the cranberries and slivered almonds ready to go in a pretty bowl and you just pour the dressing over right before you are ready to eat.Β  Trust me, it wilts.

Cranberry Spinach Salad

Not your Momma's Thanksgiving cranberries! This fabulous salad combines sweet, crunchy, nutty and satisfying all together in one delightful bowl. Perfect for any time of year, any time of day.

Ingredients
  • For the Salad:
  • 4 cups baby spinach 1/2 cup dried cranberries 1/2 cup slivered almonds
  • For the Dressing:
  • 1 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1/4 tsp salt (more to taste)
  • 1/2 tsp dried mustard
  • 1/2 tsp black pepper
  • 2 tsp poppy seeds
Directions
  • Step 1 To make the dressing, combine all ingredients in a jar and shake until combine.
  • Step 2 Layer all salad ingredients in a large bowl.
  • Step 3 Pour dressing over the salad and mix well, divide into two bowls, eat immediately or the spinach will wilt. If planning to make ahead, do not add dressing over the salad until ready to eat. Squeeze lemon on top if desired. Enjoy!
