Baked Chickpea Crackers
Vegan, Gluten Free, Baked, Healthy, Easy Snack! Crackers made from ingredients you already have in your own kitchen. The best part is knowing exactly what has gone into the snack you are eating!
Ingredients
- 1/2 cup chickpea flour (aka garbanzo bean flour)
- salt: 1/4 tsp to bake in and additional salt for topping as desired
- 1/4 tsp baking powder
- 1/4 tsp ground turmeric
- 2 tbsp nutritional yeast
- 1/2 tsp olive oil
- 4 tbsp water
- 1/4 tsp red chili pepper powder (optional for spice)
Directions
- Step 1 Preheat oven to 350 degrees.
- Step 2 Prepare two sheets of parchment paper on workspace.
- Step 3 Place all dry ingredients in a bowl and mix together until combined.
- Step 4 Add oil and continue to stir until you see the mixture begin to moisten then add water 1 tbsp at a time. The dough will be sticky.
- Step 5 Mix and knead with hands thoroughly to be sure all ingredients are combined. Once fully incorporated, transfer to parchment paper.
- Step 6 Cover with other sheet of parchment paper and roll with a rolling pin until very thin (approximately 2-3mm thin). Peel off and discard top sheet of parchment paper.
- Step 7 Using a pizza cutter slice in desired shapes (square, rectangle, cookie cutter shapes, circle, or sticks). Do not transfer. Pick entire sheet of parchment paper up and place on baking sheet.
- Step 8 Using a fork, pierce each cracker to prevent them from puffing up.
- Step 9 Sprinkle with red pepper powder and/or extra salt to your liking.
- Step 10 Bake in 350 degree oven for 15-20 minutes. Do not over bake or the crackers will be too hard. They are done when the edges are slightly golden brown.
- Step 11 Eat immediately or store in an airtight glass container for 2-3 days. Enjoy!
