Yep, you read that right. A salad dressing with no oil that still tastes good? YES! π In an effort to keep our cholesterol in check, I have been trying to create recipes that use less oil, and add more nuts to our meals. There are so many simple adjustments you can make that make a difference! People think you have to make huge sacrifices to be healthy. Not true. Small changes in the right direction add up.

I would bet you already have the ingredients for this Thai Salad with Peanut Dressing in your kitchen right now. Peanut butter + garlic + ginger + coconut aminos + vinegar! Pour over your favorite salad greens and it’s ready.
Tara’s Tips for Perfect Thai Salad with Peanut Dressing:
- Decide how thick or thin you like your dressing. You can add anywhere from 2-5 tablespoons of water. Whisk together all of your other ingredients first, add water one tablespoon at a time until desired consistency is achieved.
- Add in 1/4 – 1/2 tsp ground red pepper powder if you like a little spice. I put at least 1/2 teaspoon in ours and we love it that way.
- Pick your veggies. We like butter lettuce, shredded cabbage, carrots, tomatoes, and cucumbers. Add soybeans, sprouts, spinach, red onion, green onion, bell peppers, anything you love. We also love grilled tempeh or tofu on top!
- Meal prep Thai Salad with Peanut Dressing? YES! Store your dressing in a jar with a lid and pour over your veggies when ready to eat. Perfection π
Thai Salad with Peanut Sauce Dressing
Creamy + full of flavor + packed with nutrients! This Thai Salad with Peanut Dressing is the perfect salad that pulls together in minutes with just a few simple ingredients. Perfect for meal prep, weekend lunch, or busy weeknights!
Ingredients
- For The Salad:
- 2 cups lettuce of choice
- 2 cups shredded purple cabbage
- 1 cup carrots (shredded or spiralized)
- 1 cup cherry tomatoes
- 2 cups cucumbers (sliced thin)
- For the Peanut Dressing:
- 1/2 cup creamy peanut butter
- 1 tbsp garlic paste or minced garlic
- 1 tsp finely grated fresh ginger or ginger paste
- 3 tbsp coconut aminos
- 2 tbsp rice vinegar
- 4 tbsp water
- 1/4-1/2 tsp ground red pepper or chili powder (to taste)
- optional toppings: scallions, chopped peanuts, red pepper flakes, grilled tofu or tempeh
Directions
- Step 1 In a large bowl add all veggies, set aside while you make your dressing.
- Step 2 In a separate bowl or glass jar, whisk together all dressing ingredients, adding water one tablespoon at a time until desired consistency is reached. This can be anywhere from 2-5 tablespoons.
- Step 3 Pour dressing over salad and toss to coat. If making ahead for meal prep, store peanut dressing in a glass jar with a lid.
- Step 4 When ready to eat, assemble your salad and apply dressing.
- Step 5 This dressing can be made ahead of time and refrigerated until ready for use. Perfect for meal prep!
