🍜Do you love noodles? I do! These Spicy Udon No

🍜Do you love noodles? I do! These Spicy Udon Noodles with Tofu are on regular rotation here in the MVF kitchen. Easy to make + perfectly spicy!

🍜Here is what you need:
▪️14 ounces tofu cut into strips
▪️Two packages frozen udon noodles
▪️8 ounces sliced mushrooms
▪️1 red onion (sliced)
▪️2 tbsp gochujang sauce
▪️3 tbsp soy sauce
▪️2 cups broccoli florets
▪️4 scallions cut into 2 inch pieces
▪️1 tbsp crushed red pepper flakes

🍜Let's Cook:
▪️Grill tofu on a griddle or in a skillet until golden brown on all sides.
▪️Bring water to a boil in a large pot of water.
▪️While water boils, heat a non-stick skillet over medium-high heat, once hot, lightly spray with olive or avocado oil, add mushrooms, onions, 2 tbsp of the liquid aminos/soysauce, and gochujang sauce, sauté for 3 minutes, stirring frequently.
▪️Add in the broccoli florets and scallions, cook for another 2 minutes.
▪️Gently place udon noodles into the boiling water, turn off the heat, leave noodles in the water for 1 minute, then drain the water.
▪️Transfer noodles to the pan with vegetables, add in 1 additional tablespoon of soy sauce/liquid aminos and red pepper flakes (if using). Give everything a gentle stir. Add the tofu to the noodle mixture and gently stir until everything is coated with the sauce.
▪️Turn off the heat. Taste and adjust salt and spice level. Top with additional sliced scallions, crushed peanuts, red pepper flakes, and/or sesame seeds.

🌟 Here’s what you need:

2 cups cooked quinoa
1 can black beans
2 cups frozen corn (thawed)
1 avocado (diced)
1/4 cup diced red onion
chopped jalapeno (to taste)
For The Dressing:
1/4 cup lime juice
2 tbsp water
1 tsp sugar (I use coconut palm sugar)
1/2 tsp cumin powder
1/2 tsp salt
red chili pepper powder to taste (I use 1/4 tsp but be careful - this makes the spice level go up!)

🌟 Here’s how to build your bowl:
Place all salad ingredients in a bowl + stir. Mix dressing ingredients together in a glass jar + shake. Pour dressing on + EAT!
