Mashed Potatoes Cooked in Your Instant Pot? YES!
If you know me or you have been following my recipes, you know I love my Instant Pot! I cook something in it every day. Seriously, I do love it. I also love mashed potatoes. Let me rephrase that … I love potatoes cooked any way! Mashed is just a divine way to cook a potato! Potatoes have gotten such a bad reputation in our low-carb crazed world. Today I bring you my recipe for Easy Instant Pot Mashed Potatoes. The easiest, quickest way to cook mashed potatoes. Simply peel the potatoes, cut them up, put them in the pot, add water, set it to 8 minutes, and you are done. I like to keep things as plant-based as possible so I make ours with any plant-based milk we have + vegan butter. If you aren’t vegan feel free to use dairy milk and butter.
Let’s talk about mashing. These instant pot mashed potatoes will be so tender and easy to mash but you still need to do a little mashing. To mash my potatoes, I recently started using a potato ricer (total potato-game changer!). The two gadgets combined, make executing perfect mashed potatoes a total cinch. What are you waiting for? Instant Pot Mashed Potatoes
If you aren't using an Instant Pot to make mashed potatoes, what are you waiting for?!? This is the quickest and easiest way to make mashed potatoes.
Ingredients
- 3 lbs russet, yukon, gold, or red potatoes (washed, peeled, and cut into one inch cubes
- water (enough to cover potatoes plus one inch)
- 1/2 cup plant-based plain unsweetened milk or dairy milk
- 2 tbsp butter or vegan butter
- 1 tsp salt to taste
Directions
- Step 1 Place peeled, chopped potatoes and salt into Instant Pot. Add enough water into the pot to cover the potatoes plus one inch.
- Step 2 Cover the Instant Pot. Set valve to ‘seal’. Press the ‘manual’ button. Adjust the time on the display to 10 minutes. The Instant Pot will start automatically.
- Step 3 When the Instant Pot beeps, carefully release the pressure manually, and drain the extra water from the potatoes.
- Step 4 Transfer the potatoes to a large bowl and mash them with a fork or masher. Add in plant based milk and butter and stir until well combined and desired consistency achieved adding more milk and butter as needed. Enjoy!
