YUM! That is all I have to say. This Fennel Apple Salad is one of my FAVORITE salads! Shaved fennel + thin sliced apples + nuts + lemon + fennel fronds + so much more! You are going to love this one.
Hubby & I visited a farm this weekend and we picked this amazing, beautiful fennel straight out of the ground. I totally LOVE farm fresh veggies. Even if you don’t get your fennel from a farm, most grocery stores carry fennel during late spring and fall. It is a wonderful food if you do the right things with it. Just call me a food nerd. I love creating new and exciting recipes! This Fennel Apple Salad was created after our visit to the farm. I am delighted to report that it has quickly become a favorite here with MVF. You will soon see why!
Tara’s Tips for Perfect Fennel Apple Salad:
- Remove the stalks and fronds first, reserve a few fronds for adding in the salad later (the fronds are the green leafy things that resemble dill). Cut the fennel core out like I did in the photos above. Fennel is crunchy and sweet but the core is not, so we remove it for this salad.
- I used raisins but they could easily be swapped out for dried cranberries or even blueberries.
- Same with the walnuts, swap in some slivered almonds or even sunflower seeds or sprouted pumpkin seeds. They all work!
- Use a mandolin to thinly slice the fennel and the apples.
- Top with shaved vegan or dairy parmesan or goat cheese crumbles.
- As the name states – (no) honey mustard, replaced with raw cane sugar, maple syrup, or agave.
- Slice and prep everything ahead of time and toss in the dressing last.
- Meal prepping? Store your dressing in single-serve jars and pour over your greens when ready to eat, not ahead of time or it will get soggy.
Fennel Apple Salad
Crispy + crunchy shaved fennel + thin sliced apples + nuts + lemon + fennel fronds + so much more! Super easy, vegan, gluten free, ready in minutes!
Ingredients
- For The Salad:
- 1 apple sliced thin
- 1 fennel bulb sliced thin (reserve a few fronds)
- 3/4 cup chopped walnuts
- 2/3 cup golden raisins
- 4 cups lettuce
- For The (No) Honey Mustard Dressing:
- 2 tbsp Water
- 2 tbsp apple cider vinegar
- 1 tbsp lemon juice
- 1 tbsp sweetener of choice (cane sugar, agave, maple syrup, honey if not vegan)
- 1/2 tsp salt
- 2 tbsp dijon mustard
- 1/4 black pepper
- 1 tsp garlic powder
Directions
- Step 1 In a large bowl toss together all salad ingredients.
- Step 2 In a glass jar combine all dressing ingredients and shake well until fully combined. Adjust salt and pepper to taste.
- Step 3 Pour the dressing over the salad and serve. Enjoy!
