Ready in 10 minutes, they make the perfect meatless Mexican dinner, lunch, snack, or party food!. Customize these with your favorite toppings for an unbelievably yummy crowd pleaser!
Tara’s Tips For Perfect Air Fryer Refried Bean Taquitos:
- Use a can of beans if you like or you can use homemade refried beans. My favorite + easy + healthy + oil-free recipe right here. If you are using a can, be careful, not all refried beans are vegetarian. Check the labels.
- Alternatively, you could stuff your taquitos with potatoes! Yep, you heard me correctly. Replace the 2 tablespoons refried beans with 2 tablespoons Mexican Mashed Potatoes. YUM!
- Let’s talk about tortillas. So many options. We have tested this recipe with corn tortillas, corn/flour mixed tortillas (from Whole Foods 365 frozen), flour tortillas, whole wheat tortillas, and even cassava flour tortillas. The winner? Whole wheat tortillas. If you are going for authentic, corn tortillas are the way to go for real tortillas. With that logic, you should also be deep frying these guys 🤣. So, in my opinion use whatever tortilla is your favorite or is sitting in your freezer 😀.
- If using corn tortillas, be sure to microwave them first wrapped in a damp paper towel to soften them. If you don’t, they will crack and your stuffing will fall out.
- Don’t add too much filling as it will seep out during cooking and make a giant mess.
- Roll them tightly! Taquitos are not burritos, they are intended to be rolled tightly and tubular.
- You can assemble these ahead of time and air fry them when you need them. Perfect for party food.
- Every air fryer is different. My air fryer fits 4 at a time. Don’t stack them up on top of each other! Cook them in batches so they aren’t crowded.
How To Serve Homemade Taquitos
These are simply fabulous on their own but who doesn’t love a great dip?!?! Try dunking these cuties into Homemade Guacamole or Creamy Vegan Avocado Dressing or Vegan Chipotle Mayo. Our favorite way to eat these is to pile up our favorite toppings on top including shredded lettuce, sliced black olives, diced avocado, jalapenos, and chopped onions. Don’t forget the salsa! Air Fryer Refried Bean Taquitos
These Air Fryer Refried Bean Taquitos are so easy + yummy you might want to make a double batch, they are seriously addictive!
Ingredients
- 8 corn tortillas (sub whole wheat or flour tortillas)
- 1 1/2 cups cooked or 1 can vegetarian refried beans
- avocado or olive oil spray (optional/omit if oil-free)
- toppings: guacamole, diced avocado, chopped onion, salsa, choice of vegan or dairy cheese and sour cream, shredded lettuce, jalapenos, black olives.
Directions
- Step 1 Stack tortillas on a plate, wrap them in a damp paper towel, microwave for 40 seconds to soften.
- Step 2 One by one, spread 2 tbsp refried beans in the lower 1/3 of each tortilla and then roll tightly until all 8 tortillas have been assembled.
- Step 3 Spray the air fryer tray with a small amount of oil spray. Place 4 tortillas in the air fryer basket with the seam down. Spray each one with a little more oil spray. Do not overcrowd. If you have a smaller air fryer, you may need to cook them in additional batches.
- Step 4 Air fry on 400 degrees for 3 minutes. Turn each taquito over and cook an additional 3 minutes. They are done when the edges are golden brown and crispy. Each air fryer is different, cook an additional 1 minute at a time until a crispy tortilla is achieved.
- Step 5 Carefully remove from air fryer basket. transfer to a plate and top with desired toppings.
- Step 6 Repeat this process until all taquitos are cooked. Enjoy!
