Perfect Thanksgiving side dish for kids, vegans, vegetarians, aspiring vegetarians and everyone inbetween! Easy and healthy!

Ingredients
  • 1 egg or flax egg replacement
  • 4 slices of bread
  • 1 tbsp butter or vegan butter
  • 1 onion chopped small
  • 2 celery stalks chopped small
  • 1 tsp sof each: sage, thyme, salt + black pepper
  • 1 cup vegetable broth
Directions
  • Step 1 Make vegan egg replacement according to package directions and set aside or scramble a non-vegan egg.
  • Step 2 Preheat oven to 375 degrees.
  • Step 3 Cut bread into one inch cubes and place in a large bowl.
  • Step 4 Heat vegan butter in a pan over medium-high heat, add onions, celery, sprinkle with salt and sauté for 5 minutes until onions are translucent being careful not to burn onions. Add water as needed to prevent burning and sticking to pan. Turn off heat.
  • Step 5 Add pepper, sage, and thyme to the pan and stir until fully combined. Transfer to bowl.
  • Step 6 Add the vegan egg and broth to onion/celery bowl and stir again until fully combined. If egg is too thick add water 1 tbsp at a time.
  • Step 7 Add the onion/egg mixture to the bread and stir until bread is coated.
  • Step 8 Roll into 12 balls and place on a parchment paper lined baking sheet.
  • Step 9 Bake in a 375 degree oven for 20 minutes. Remove from oven and allow to sit for 5 minutes prior to eating or serving. Serve with gravy over top or dunk in. Enjoy!
