What Will You Need For This Cucumber Salsa Recipe?
- cucumbers
- onions
- cilantro
- salt
- lemon + lime juice
Tara’s Tips For Perfect Cucumber Salsa:
- Use fresh, ripe cucumbers. Kirby or pickle cucumbers are ideal for this dish. If you use English or American, consider removing the seeds.
- The spice level … I use one whole jalapeno in here BUT we like things spicy! If you are sensitive to spice, use only 1/4 of the jalapeno or take out the seeds. You can always taste test and add more.
- Fresh cilantro works best. Dried cilantro will not have enough flavor in this copycat recipe. It will also soak up too much water. Try using fresh cilantro if it is available to you.
- Don’t make this too far in advance as it tastes + looks best freshly made. If you must make in advance, keep the cucumbers separate from the other ingredients until ready to eat or serve.

5-Minute Cucumber Salsa Recipe
This salsa is an easy way to up your veggies in your salsa, swap out the tomatoes for cucumbers for a fresh twist on traditional salsa. Perfect to pair with any of your favorite Mexican dishes or as a summer side dish!
Ingredients
- 2 cups diced cucumbers
- 3/4 cup diced red onion
- 1/4-1 finely chopped jalapeño (be careful! this determines the spice level. remove the seeds to take down the heat)
- 1/4 cup finely chopped cilantro
- 1 tsp salt
- 1/2 tbsp lemon + 1/2 tbsp lime juice
- 1/2 tbsp vinegar
Directions
- Step 1 Combine all ingredients in a large bowl and gently stir to mix together.
- Step 2 Serve chilled with chips, on top of nachos, in a taco, or on its own as a snack!
- Step 3 Enjoy!
