Easy Tofu Scramble

Need a break from your usual scrambled eggs? Not really into eggs? Maybe you choose not to eat eggs at all but really miss scrambled eggs? Wow, could I use a break from a few things today! So, I bring you Easy Tofu Scramble in honor of all those who need a break from whatever it is that you need a break from 🙂

Never scrambled tofu before?

That’s ok! It is SO easy.  The key to making any kind of tofu is to get all of the water out.  When I buy tofu I immediately put it in the freezer.  Then, when I am ready to use it, I take it out of the freezer and after a few minutes of it defrosting I can get those giant chunks of ice off the sides.  That helps get more water out quicker.  Can’t store eggs in the freezer so the tofu is already looking better and better.  After all the ice is off and the tofu is defrosted, wrap it in a towel and press it down with something very heavy.  That allows the tofu to maintain it’s shape while pushing out the water.  If we were cutting it for a stir fry or to grill it we would then bake it to pull even more water out but for Easy Tofu Scramble that is not necessary.

Nutritional Yeast

Get some.  Keep it in your kitchen. It is so useful! In Easy Tofu Scramble it gives the eggs a cheesy flavor. I go into more detail about nutritional yeast in what has turned out to be this blog’s most popular recipe, Broccoli No-Cheddar Soup. Definitely a must-try.

  • 8 oz organic extra firm tofu
  • 1 tbsp nutritional yeast
  • 1 tsp ground turmeric
  • 1/2 tsp Salt
  • 1 tsp Oil canola, avocado, or olive
Prep Time 5 minutes

Instructions
  1. Remove tofu from packaging, wrap in a clean towel, place something heavy on top to drain out the water. Leave to drain for 5-15 minutes.
  2. Unwrap tofu and crumble into small pieces with a fork or your hands, sprinkle with nutritional yeast, turmeric and salt, gently toss to coat all of the tofu.
  3. Heat oil over medium-low heat in a cast iron skillet or non-stick pan of choice
  4. Once hot, add tofu, cook over medium-low heat for 5 minutes or until tofu is heated all the way through. Add water as necessary to prevent sticking and browning.
  5. Transfer to serving dish and serve or eat immediately with fruit, toast, breakfast potatoes, spinach, or make it into a breakfast sandwich!
