Peanut Butter Banana Bread

Want to know what my favorite sandwich is? It is a close tie between avocados on my bread vs peanut butter and bananas on my bread.  I haven’t figured out how to bake an avocado and slice it into wonderfulness BUT I have mastered the art of baking Peanut Butter Banana Bread. So, for today, I’m going with peanut butter banana bread as my fav.

Gluten Free + Vegan

How? The egg is replaced with a flax egg (but you can substitute a real egg) and the white flour typically baked into banana bread is replaced with almond flour, oat flour, and oats. How is it sweetened? 4 Bananas (yes, I said 4!), a little applesauce, and just 1/4 cup of brown sugar (you could leave it out I guess but why would you?).  I sprinkled a little extra brown sugar on top prior to baking just for a little sweet crunch (try it!).  I snapped a photo prior to baking just so you could see how much this hearty peanut butter banana bread rises (and how lovely the brown sugar looks on top!).

What should you do with your peanut butter banana bread?

  • slice and eat while still warm
  • slice and put in freezer in individual portions for busy mornings or snack time
  • put a slice in the toaster (my favorite), top with more peanut butter, bananas, chocolate chips, maybe some berries or homemade jam
  • dice and put in your breakfast bowl
  • share it 🙂
  • Remember! This is a hearty bread.  It takes a long time to cook because it is thick.  It is more of a breakfast or brunch loaf.  It is nutritious, packed with all good ingredients, and protein!

Ingredients
  • 4 Ripe Bananas mashed
  • 1 egg or flax egg replacement if vegan recipe only tested with flax egg replacement
  • 1 tsp vanilla extract
  • 1/4 cup unsweetened applesauce
  • 3/4 unsweetened almond or coconut milk recipe not tested with dairy milk
  • 1/4 cup brown sugar
  • 1/4 cup peanut or almond butter warmed in microwave or on stove top until thick liquid consistency
  • 3.5 tbsp baking soda
  • 1/2 tsp Salt
  • 1 1/4 cup almond flour
  • 1 1/4 cup Oat Flour
  • 1 1/4 cup gluten free organic old fashioned oats

Instructions
  1. Prepare flax egg replacement according to package directions and set aside
  2. Prepare loaf pan by greasing with coconut oil or vegan butter spread or line your pan with parchment paper
  3. Preheat oven to 350 degrees
  4. Combine bananas, milk, vanilla, sugar, and applesauce in a medium size mixing bowl and stir until fully combined. Add egg replacement and warmed peanut butter. Stir again.
  5. Once combined, add the rest of the ingredients and continue to stir by hand or with a mixer on low until all ingredients combined and there are no dry areas.
  6. Pour batter into prepared pan and bake in 350 degree oven for 75 minutes or until golden brown on top and toothpick inserted into center comes out without a sticky residue.
  7. Let cool completely prior to removing from pan or slicing. Leftovers can be store in individual slices in the freezer or in refrigerator in an airtight container.
