Oven Baked or Air Fryer Method

Beet chips are SO under-appreciated.  Why is that? I know why.  Some people don’t really understand beets.  They boil them or overcook them or season them wrong or pickle them.  I think there was an era where beets were pretty much in every salad bar everywhere just sitting there waiting to be cooked properly and not even getting the chance to be eaten (dramatization!). Now that we have the beets out of the salad bar, we can start baking them or even better … put them in the Air Fryer! Either way, oven baked or air fryer method, these beet chips will certainly not be under-appreciated.

Crispy Air Fryer Beet Chips

What is so great about beets anyway?

  • they are pretty 🙂
  • that pretty color comes from the pigment betacyanin, which might help fight cancer cells
  • packed with B vitamins, iron, manganese, copper, magnesium, and potassium!
  • beets are high in nitrates which might help lower blood pressure (how, you ask? the short answer is nitrates get converted to nitric oxide which helps improve circulation and open blood vessels)
  • athletes eat lots of them because they (might) help you run faster or pedal harder (nitrates again)
  • they contain betalains which are powerful antioxidants that help fight inflammation, chronic diseases, and cancer
  • they are easy to cook in the air fryer or oven baked!
  • they are yummy
  • great for dipping
  • you can buy them fresh (they are so pretty!) or pre-sliced in the freezer section

If you are a beet skeptic and/or have bad memories of the salad bar beets :0 give these beets a chance! You won’t regret it!

Beet Chips Oven Baked Or Air Fryer

So, lets get going!

Oven Baked Method:

  1. Preheat oven to 375 degrees
  2. Slice beets with a mandolin or knife (not too thick!)
  3. If using frozen beets, place in a colander and run under warm water until thawed
  4. Spread beets on baking sheet, dry them well, then spray with olive oil and sprinkle with coarse sea salt (if you don’t have coarse salt, don’t worry! use regular salt.  I like the coarse salt here because it adds to the crunch and sticks well to the oil)
  5. Bake for 20 minutes.  Start watching them closely as 20 minutes approaches.  The thinner you slice your beets, they quicker they will cook (and burn!)
  6. Remove from oven, transfer your yummy oven baked beet chips to serving platter or bowl and dip them in hummus or eat them as is!

Air Fryer Method:

  1. Preheat Air Fryer to 200 degrees
  2. Slice beets with a mandolin or knife (not too thick!)
  3. If using frozen beets, place in a colander and run under warm water until thawed
  4. Spread beets on baking sheet, dry them well, then spray with olive oil and sprinkle with coarse sea salt (if you don’t have coarse salt, don’t worry! use regular salt.  I like the coarse salt here because it adds to the crunch and sticks well to the oil)
  5. Transfer to Air Fryer Basket.  It is alright if they are crowded, does not need to be single layer like it does with air fryer green beansCook in Air Fryer for 20 minutes shaking the basket every 5 minutes.  You will stop complaining about needing to shake the basket when you are eating them 😉 Remember, every air fryer is different and every little beet slice is different so cook times will vary.  I actually removed some of my thinner chips and allowed the thicker ones to cook longer (I ate them while waiting for the others to get done).
  6. Remove from basket, transfer to serving dish, serve with hummus or on their own!
