Homemade Chewy Peanut Butter Granola Bars

Yes, these Homemade Chewy Peanut Butter Granola Bars are perfect! Perfect for a snack to crush the craving, perfect for meal prep, bust mornings, after school, pre or post workout, and travel! Anyone that has ever traveled with me know that my bag is full of food! It has to be! Someone gets hungry and I don’t like searching for a healthy (and meatless) snack especially in a city or country I am not familiar with! This is just one of my travel hacks I live by. Peanut Butter + Oats + Syrup or Honey + Salt

Heat the peanut butter, add honey or agave or maple syrup, fold in some salt and oats and there you have it! Perfectly chewy little squares you can toss in a bag and go!

My Vegetarian Family packs these little cuties when we hike or travel or go for a long bike ride.  I also keep them around for kids to grab and go in the morning or stash in their backpack for a snack at school.  Its like a sweet bowl of oats in the form of a little bar!

Perfect for a gift or when you need to bring snack to class or team sport.  You can also customize it to be allergy friendly with other nut butters. OR add in chocolate chips, crushed nuts, coconut or dried fruit! Hope you love them as much as we do!

  • 2 cups gluten free organic old fashioned oats I used Bobs Red Mill
  • 1 cup Peanut Butter I used crunchy Crazy Richards but this recipe also works with other nut butters suitable for allergy friendly bars
  • 1 cup Honey (if not vegan) or Agavae or Maple Syrup (vegan option)
  • 1/4 TSP Coarse Sea Salt

Instructions
  1. Line 8x8 pan with parchment paper and set aside
  2. Pour oats in a medium bowl and set aside
  3. Heat peanut butter in a small pan over low heat until a thick liquid consistency is reached stirring constantly, turn off heat and add honey, stir until well combined
  4. Pur peanut butter mixture into oats and gently mix until all oats are moist, then add salt and stir
  5. Scoop batter into prepared pan evenly pressing the batter into the corners and flattening
  6. Freeze for 30 minutes or until firm, or refrigerate for 2 hours.
  7. Remove from freezer, cut into squares or rectangles, eat or serve immediately or wrap individually and store in refrigerator until ready to use.
