As I am writing this post there are officially 7 days left until Christmas.  I have to admit, we are not over-the-top Christmas participants.  Before this year I could not understand why.  I like the lights and the trees and the music and the togetherness that the holiday brings.  However, I do not enjoy the indulgence and the overspending and the commercialism that has taken over this holiday.  This is my first Christmas as a food blogger.  That is how I figured it out.  My commitment to spreading my love of all things healthy has made me realize just how unhealthy people can be this time of year.  Just because it is a holiday season, we don’t need to have an unhealthy mindset.  This is how Chocolate Chia Pudding came to be.  Just one example of my attempt to help people understand how to stay healthy during the holidays.  You can have sweets.  Chocolate sweets too! But keep it simple and healthy without feeling deprived.

Chia Seeds

Tiny little seeds of wonderfulness.  Packed with fiber and omega-3 these little guys should be a staple for vegetarians and vegans. Chia pudding can easily be made with any milk – vegan or not – and let it sit for a few minutes or overnight and there you go … healthy with a hint of sweet and definitely chocolatey satisfying.

3 Simple Ingredients:

Chia Seeds + Cacao Powder + Almond Milk

Chia Seeds + Chocolate + Vegan Milk = Chocolate Chia Pudding

Mix them together, toss them in a jar, shake it up (then wait 15 minutes … maybe go make some tea to go along with it or coffee or blow dry your hair or throw in some laundry or do some planks … and come back) and eat! Don’t forget your favorite toppings! The toppings take it from chocolate chia pudding to awesomeness.  Add berries, nut butters, vanilla, cinnamon, bananas or whatever!!! See … you can start your day out with a vegan, gluten free, healthy, protein and vitamin packed breakfast and not feel as though you have been deprived … yum!

  • 1 cups Soy, Rice, Almond, or Coconut Milk dairy milk if not vegan
  • 2 tbsp cacoa powder or vegan chocolate protein powder
  • sweetener options: 2 tbsp maple syrup
  • optional toppings 1 tbsp nut butter

Instructions
  1. Combine chia seeds, cacoa powder or chocolate protein powder, and milk of choice in a jar, shake well to combine, cover and refrigerate for 15 minutes or until desired pudding consistency achieved.
  2. Add toppings as desired. Eat or serve immediately or store in a glass container with cover for up to 3 days.
