3 Ingredient Cookies No Sugar No Flour #myvegetarianfamily

Yes, I did! I baked a cookie that is perfect for any food allergy or dietary restriction! You can eat it for breakfast or a snack or dessert.  If you need to, you can add nuts, cranberries, vanilla, cinnamon or whatever! Fold in your optional ingredients prior to spooning onto cooking sheet and you will have your very own 3 Ingredient cookie customized with 3 or 4  or 5 ingredients!

Bananas + Gluten Free Oats + Vegan Chocolate Chips = 3 Ingredient Cookies

On this particular morning that these cuties came to existence, I had just finished a 20 mile training run and nothing looked good enough to eat.  I wanted a cookie but didn’t want all the sugar and I really wanted bananas but mine were still green.  So, I pulled out my secret stash of frozen bananas.  I freeze the bananas when they are about to get super brown and inedible but I am not ready to bake with them so I toss them in the freezer for a day like today! Magic … 3 Ingredient Cookies! Clean, healthy post-run fuel.  Awesome!

Got busy mornings? Store these in the freezer and while you are getting ready reheat them. What you have is a mini bowl of oatmeal that could be confused for banana bread or a chocolate chip cookie 🙂

Instructions
  1. Preheat oven to 350 degrees
  2. Place 2 bananas in a medium size bowl and mash with a fork until they are smooth. If using frozen bananas, thaw out and mash.
  3. Add oats and stir until oats are fully coated with the banana and then stir in the chocolate chips. Add any optional add-ins at this time.
  4. Spoon batter in one tablespoon size portions onto a parchment paper lined baking sheet with one inch in between cookies.
  5. Bake in 350 degree oven for 12-15 minutes or until cookies are no longer wet in appearance. Allow to cool on a wire cookie rack and then eat or serve. Can freeze for busy mornings or store in airtight glass container in the refrigerator for 7 days.

Optional Add-Ins:

  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • dried cranberries
  • walnuts
  • whatever else you would like in your cookies!
