Yes, I did! I baked a cookie that is perfect for any food allergy or dietary restriction! You can eat it for breakfast or a snack or dessert. If you need to, you can add nuts, cranberries, vanilla, cinnamon or whatever! Fold in your optional ingredients prior to spooning onto cooking sheet and you will have your very own 3 Ingredient cookie customized with 3 or 4 or 5 ingredients!
Bananas + Gluten Free Oats + Vegan Chocolate Chips = 3 Ingredient Cookies
On this particular morning that these cuties came to existence, I had just finished a 20 mile training run and nothing looked good enough to eat. I wanted a cookie but didn’t want all the sugar and I really wanted bananas but mine were still green. So, I pulled out my secret stash of frozen bananas. I freeze the bananas when they are about to get super brown and inedible but I am not ready to bake with them so I toss them in the freezer for a day like today! Magic … 3 Ingredient Cookies! Clean, healthy post-run fuel. Awesome!
Got busy mornings? Store these in the freezer and while you are getting ready reheat them. What you have is a mini bowl of oatmeal that could be confused for banana bread or a chocolate chip cookie 🙂
