Peanut Butter Energy Bites with Cranberries and GF Oats

These little cutie  cranberry peanut butter energy bites are the perfect take-along snack for picnics, bike rides, long car rides, pre-workout, post-workout, “mom I’m hungry” moments, lunch boxes, and they even make a quick portable breakfast you can grab and go on busy mornings.  I eat these before or after a run and take them with me on bike rides because I can stash them in my stasher bags and I know they will stay fresh without tasting like plastic by the end of my workout. Really don’t like my snack tasting like plastic.

Don’t want to use peanut butter? Swap it out for any other nut butter.  I used Crazy Richards in this one because it mixes well.

  • 1/2 cup chopped walnuts
  • 1/2 cup dried or freeze dried cranberries
  • 1/2 cup gluten free old fashioned oats
  • 4 tbsp ground flax
  • 1/4 cup US Maple Syrup

Instructions
  1. Place all dry ingredients in a medium size bowl and mix. When fully combined, add in maple syrup and peanut butter. Stir until all dry ingredients are coated with wet. If the mixture is too dry, add more maple syrup as needed.
  2. Scoop out batter, approximately 2 tablespoons at a time, and roll into balls. Place on a parchment paper lined baking sheet and place in freezer for 10 minutes or refrigerator until formed or enjoy immediately! Store leftovers (if any) in an airtight container in refrigerator for 3-5 days.
