Quinoa Vegetable Soup Vegan GF Made In Instant Pot or Stovetop

How else can I describe this soup?  It is the absolute perfect soup for any time of year, any mood, any meal. Hearty Quinoa Vegetable Soup that you can make on the stove-top or in your Instant Pot.

I think I start out every Instant Pot recipe with this but here I go anyway … If you don’t have an Instant Pot yet … why not??? If you already have one and it is still sitting in the box, take it out of the box and use it to make quinoa vegetable soup today. As you may already know, The Instant Pot is one of my favorite kitchen gadgets of all time.  Yes, you need one! You need it for Mexican Quinoa, Pumpkin Quinoa Breakfast Bowl, Instant Pot Mashed Potatoes,  Pumpkin Puree, and just to make your life easier! I have just made it even easier … you can get one right here.

Anyway, back to today’s recipe for soup! Fabulous Vegetable Quinoa Soup.  I literally put every vegetable I could find in this soup.  So can you! You can’t possibly mess it up.  Put your favorites in,  take out what you don’t like.  I like them all so I put them all in.

First things first,  rinse the quinoa! Don’t ever make quinoa without rinsing it! It will taste bad and bitter and a little bit like soap.  You will never eat it again and I don’t want that to happen. Need more advice on quinoa, start with this article: Health Benefits of Quinoa.

One Pot, Easy, Ready in Under 30 Minutes

Saute the onions and garlic, stir in the quinoa (rinsed quinoa), your veggies of choice, and your herbs … see … easy!

  • 1 tbsp Olive or Avocado Oil
  • 1 Onion diced
  • 1 tsp Salt
  • 4 cloves garlic smashed
  • 1 cup quinoa Rinsed well
  • 6 cups Vegetable Broth
  • 2 stalks Celery chopped
  • 1 cup Carrots cut to desired shape
  • 2 cups Spinach Leaves
  • 1 Cup Broccoli or Cauliflower Florets or both
  • 1 Yellow Zucchini sliced into rounds
  • 1 Green Zucchini sliced into rounds
  • 1 tbsp Trader Joe's 21 Seasoning Salute
  • 1 tsp Thyme
  • 1 tsp Basil
  • 1 tsp Oregano
  • 1 tsp Ground Black Pepper

Instructions
Instant Pot Method
  1. Rinse Quinoa thoroughly in a mesh strainer and set aside
  2. Set Instant Pot to 'Saute', once hot add olive oil, onions, garlic, and sprinkle with the salt to prevent burning. Saute for 5 minutes with lid off, stirring frequently.
  3. Add the remainder of the ingredients (vegetables, broth, rinsed quinoa, herbs). Close and seal the lid on the Instant Pot and set to 'Manual' for one minute. Be sure the vent is turned to 'seal'.

  4. When time is up, manually release the steam and your soup is ready!
Stove-Top Method
  1. Rinse Quinoa thoroughly in a mesh strainer and set aside
  2. Heat olive oil in a medium-large pot on medium-high heat. Once hot add olive oil, onions, garlic, and sprinkle with the salt to prevent burning. Saute for 5 minutes with lid off, stirring frequently.
  3. Add the remainder of the ingredients (vegetables, broth, rinsed quinoa, herbs). Lower heat to low and simmer with lid on for 20 minutes. Stir frequently. Your soup is done!
