Baked Chickpea Crackers

Vegan, Gluten Free, Easy, Healthy, Ready in under 30 minutes!

 

These baked chickpea crackers can be paired with soups (pictured above is Quinoa Vegetable Soup), put in lunch boxes along with homemade hummus, or simply eaten on their own.  I love these baked chickpea crackers because there are so many crackers in stores with a list of ingredients that spreads along the entire side of the box! What are all of those things?!??

With these baked chickpea crackers you get simple ingredients stirred together and baked.  My favorite kind of food. Perfect for kids, adults, and even babies if you leave off the red pepper!

Ingredients
  • 1/2 cup chickpea flour I use Bob's Red Mill
  • 1/4 tsp Salt plus more for sprinkling on top
  • 1/4 tsp baking powder
  • 1/4 tsp ground turmeric
  • 2 tbsp nutritional yeast
  • 1/2 tsp canola oil
  • 4 tbsp Water
  • 1/4 tsp Red Chili Pepper Powder

Instructions
  1. Preheat oven to 350 degrees
  2. Prepare two sheets of parchment paper on workspace
  3. Place all dry ingredients in a bowl and mix together until combined
  4. Add oil and continue to stir until you see the mixture begin to moisten then add water 1 tbsp at a time. The dough will be sticky.
  5. Mix and knead with hands thoroughly to be sure all ingredients are combined and transfer to parchment paper
  6. Cover with other sheet of parchment paper and roll with a rolling pin until very thin (approximately 2-3mm thin). Peel off and discard top sheet of parchment paper.
  7. Using a pizza cutter slice in desired shapes (square, rectangle, cookie cutter shapes, circle, or sticks). Do not transfer. Pick entire sheet of parchment paper up and place on baking sheet.
  8. Using a fork, pierce each cracker to prevent them from puffing up. Like I did in this photo.

  9. Sprinkle with red pepper powder, salt and if desired pepper or paprika.
  10. Bake in 350 degree oven for 15-20 minutes. Do not over bake or the crackers will be too hard. They are done when the edges are slightly golden brown.
  11. Eat immediately or store in an airtight glass container for 2-3 days. Enjoy!
