Chocolate Peanut Butter Popcorn

This recipe is SO easy and SO perfect for kids, holidays, game day, parties, and even gifts! You start with air popped popcorn, melt the chocolate and peanut butter, and pour over the popcorn.  After a few minutes in the refrigerator this popcorn is perfectly sweet, a touch salty, and very satisfying with a hint of nutty flavor.  If you have never had Homemade Chocolate Peanut Butter Popcorn you have to try this one.

I prefer to start with mushroom popcorn for a snack such as this one.  You can use any popcorn and it will be great but we like the mushroom popcorn because the yummy chocolate and peanut butter have more space to spread out on mushroom popcorn.  I’ve never been able to find mushroom popcorn in the stores, so here is where I get mine: Gourmet Mushroom Popcorn.

To keep my Chocolate Peanut Butter Popcorn vegan, I use vegan chips (Enjoy Life Semi-sweet Chocolate Mini Chips) and a peanut butter that totally has my approval in the manufacturing process and ingredient list (Wild Friends Foods Classic Creamy Peanut Butter).  If you’ve been reading my blog you know that I only suggest products that I feed my own family and I trust how it was made and what is in it.  This snack is a total winner!

Vegan, gluten free, high fiber, packed with clean protein

Instructions
  1. Combine peanut butter and vegan chocolate chips in a small pot and heat on medium until combined and melted, stirring constantly
  2. Pour over popped popcorn and stir until popcorn fully coated
  3. Lay flat on a parchment paper lined baking sheet, sprinkle with additional chocolate chips and coarse kosher sea salt to taste
  4. Place in refrigerator for 30 minutes or until ready to serve or eat. Transfer to glass jars or containers while cold if packaging for gifts.
Recipe Notes

Double or triple the recipe if serving a group or making into gifts.

Option to use almond butter if needed.

I prefer to use mushroom popcorn here because it pops with a larger rounded surface area for the melted mixture to stick to.
