What to make for the vegetarians on Thanksgiving? Let me think ….

I feel as though I have a rare contagious disease on Thanksgiving.  Any other vegetarians feel like that on Thanksgiving? I know a few who would say yes.  Seems as though we are a nuisance to have over because no one ever knows what to cook for us.  So, we end up going to visit friends or family and we might eat the one thing that maybe didn’t get accidentally drowned in turkey juice.  I’m slightly exaggerating.  Slightly.

So … this year I have the answer.

As usual, here are my tips for recipe success:

Follow my instructions and images on tightly rolling the roast prior to putting in the oven. Finely chop the mushrooms.  If you can avoid it, please do not do this by hand! You will add on way too much time and effort that is unnecessary.  If you don’t have a chopper, now is the time.  As you may already know, I like kitchen gadgets.  I like them because they make cooking fun by facilitating the little things (like chopping mushrooms 🙂 ).  Anyway, I use this Cuisinart Smart Stick and I love it.  So easy and you can change the attachment for the hand blender in this recipe.  Time saver, less mess, count me in.

Pour some homemade vegetarian gravy over these, pair with homemade mashed potatoes, some mini corn muffins and you are all set! Maybe healthy apple crisp for desert? Sounds delectable 😉 Let’s get cooking and make the vegetarians feel welcome on Thanksgiving!

Instructions
  1. Preheat oven to 400 degrees
  2. Prepare 2 pieces of alluminum foil (approximately 22 inches long) on top of each other staggered by a few inches and on top place one piece of parchment paper (approximately 20 inches long)
  3. Combine all dry ingredients and spices in a medium bowl and stir to combine

  4. Combine all wet ingredients along with almond butter and garlic in a medium bowl, blend with a hand immersion blender or transfer to blender and blend until smooth. I like this one: Cuisinart Smart Stick

  5. Place washed mushrooms in a food processor or chopper and chop until finely chopped. I use the same gadget as above with the other attachment.
  6. Combine wet ingredients, dry ingredients, and mushrooms in a large bowl and stir until well combined. You will need to use your hands to mix the ingredients together and knead until fully mixed with no dry areas. Should look like mine in the image.

  7. Transfer seitan loaf to prepared parchment paper. Fold the long ends of theparchement paper first then foil towards yourself and fold the ends of the in to wrap the loaf. See image.

  8. Transfer foil wrapped loaf to a baking sheet and bake in a 400 degree oven for 25 minutes, turn over and bake an additional 25 minutes, turn over again and bake for 30 more minutes. Turn oven off and leave in oven for 5 minutes.

  9. Remove from oven and let sit for 5 minutes before slicing in one inch slices. Top with gravy and enjoy! Leftovers can be kept in glass container for 3-5 days and reheated.
