If you know me or you have been following my recipes, you know I love my Instant Pot.

I cook something in it every day.  Seriously, I do love it.

I also love mashed potatoes.  Potatoes have gotten such a bad reputation in our low-carb crazed world.  Want the skinny on potatoes? Read my tips here, and I’m sure you will agree with me that they don’t deserve their bad reputation.

Today I bring you Instant Pot Mashed Potatoes.  The easiest, quickest way to cook mashed potatoes.  Simply peel the potatoes, cut them up, put them in the pot, add water, set it to 8 minutes, and you are done.  I like to keep things as plant-based as possible so I make ours with any plant-based milk we have or vegetable broth and vegan butter but if you aren’t vegan feel free to use milk and butter.

Let’s talk about mashing.  These potatoes will be so tender and easy to mash but you still need to do a little mashing.  To mash my potatoes, I recently started using a Potato Ricer. The two gadgets combined, make executing perfect mashed potatoes a total cinch.  We are all going to eat potatoes on Thanksgiving anyway.  Why not offer to make the absolute easiest thing that turns out fabulous and you look like a total rock star. Instant Pot Mashed Potatoes

  • 3 lbs Organic Potatoes Peeled and cut into 1 inch cubes russet, yukon, gold, butter
  • Water enough to cover potatoes
  • 1/2 cup plant based milk or dairy milk if not vegan
  • 2 tbsp vegan buttery spread or butter if not vegan
  • 1 tsp Salt

Instructions
  1. Place peeled, chopped potatoes and salt into Instant Pot. Add enough water into the pot to cover the potatoes plus one inch.
  2. Cover the Instant Pot. Set valve to 'seal'. Press the 'manual' button. Adjust the time on the display to 8 minutes. The Instant Pot will start automatically.
  3. When the Instant Pot beeps, release the pressure manually, and drain the extra water from the potatoes.
  4. Transfer the potatoes to a large bowl and mash them with a fork or masher. Add in plant based milk and butter and stir until well combined and desired consistency achieved adding more milk and butter as needed. Enjoy!
