Now I don’t have to worry.  Yes, I will find something else to worry about … just wait a few days … or a few minutes 🙂

Anyway, this breadcrumb pasta is the answer to your pasta prayers.  Swapping out your typical spaghetti made of enriched, processed, bleached four or semolina for this protein and vitamin packed version is a total win! Then you mix it with gluten free breadcrumbs and olive oil with heart healthy fats.  Top it with vibrant roasted veggies and dinner is ready! Or lunch or brunch or whatever.  Never need an excuse to enjoy guilt-free pasta!!!

As with all of my recipes, follow my tips as listed and it will turn out right.  You are going to love this one. Just a warning … this is not a make ahead, do it just in time for dinner.  I made that mistake so you don’t have to :).

  • 16 oz gluten free pasta
  • 6 cups Water
  • 1 1/2 cups Panko Gluten Free Breadcrumbs
  • 1 tbsp olive oil
  • 1/2 tsp Salt
  • 1/2 tsp Ground Black Pepper
  • 1 tsp garlic granules or powder
  • 1 tsp onion granules or powder

Instructions
  1. Cook pasta according to package directions
  2. While pasta is cooking, heat 1/2 tbsp oil in a medium non-stick or cast iron pan over medium-high heat, once hot add breadcrumbs, salt, pepper, garlic, and onion powders. Cook the mixture, stirring frequently, until breadcrumbs are toasted and slightly brown, then remove from pan and set aside.
  3. When pasta is done cooking, drain but reserve the cooking water
  4. Heat the other 1/2 tbsp oil over medium-high heat in same pan used to toast the breadcrumbs. Add pasta and stir. Then add one cup of the reserved cooking water and stir again. Slowly sprinkle in toasted breadcrumbs while continuously stirring. Pasta should be evenly coated with breadcrumbs.
  5. Top with roasted vegetables of your choice (I chose asparagus with roasted garlic). Eat or serve immediately. Enjoy!
