Sounds like dessert! But the health benefits of quinoa far outweigh dessert. This Pumpkin Quinoa Breakfast Bowl is easy enough to make on a busy weekday morning or for a special treat on the weekend. We make a big batch of quinoa in the Instant Pot on the weekend and store it in jars to have ready to flavor it up for a healthy breakfast or lunch during the week. Making quinoa in the Instant Pot takes just a few minutes. You can also make a big batch of pumpkin puree in the oven or instant pot ahead of time. There is plenty to do with extra pumpkin puree!
