Sounds like dessert! But the health benefits of quinoa far outweigh dessert.  This Pumpkin Quinoa Breakfast Bowl is easy enough to make on a busy weekday morning or for a special treat on the weekend.  We make a big batch of quinoa in the Instant Pot on the weekend and store it in jars to have ready to flavor it up for a healthy breakfast or lunch during the week. Making quinoa in the Instant Pot takes just a few minutes.  You can also make a big batch of pumpkin puree in the oven or instant pot ahead of time.  There is plenty to do with extra pumpkin puree!   • 1/2 cup cooked quinoa
  • 1/2 cup Almond Milk or any milk will do: organic low fat dairy, coconut, soy, or rice
  • 1 tsp ground cinnamon
  • 1/4 cup pumpkin puree
  • 1 tbsp US Maple Syrup or honey if not vegan
  • Toppings walnuts, raisins, bananas, chocolate chips, coconut

Instructions
  1. Combine cooked quinoa, milk of choice, and maple syrup in a small pot. Cook over medium heat for 3 minutes stirring constantly until combined and heated through.
  2. Top with cinnamon and additional toppings as desired.
  3. Serve or eat or transfer to a jar for breakfast on the go! Double the recipe to share or make ahead.
Recipe Notes

Notes:

  • Make quinoa according to package directions with only water, do not use broth or salt
  • Can substitute cooked oats in place of quinoa
  • Option to add apple sauce or honey instead of maple syrup
  • Recipe is for one breakfast but perfect to make ahead in big batches
