As you know from my confessions in my other recipes, I research, I try, I fail, I research again, I try again (repeat as necessary).  Repeating until I get it right. Tofu is an ever-evolving dish for me.  I am always experimenting with tofu.  However, most people don’t give tofu the second (or third … etc) chance like I have.  I learned how to cook tofu and am here now to teach you how to cook tofu.

Lots of people who are not vegetarian do not know how to cook tofu.  Chances are, even if you are vegetarian, you don’t know how to cook tofu.  So, this tofu for beginners is for you.

Tara’s Tips on How To Make Tofu Turn Out Right Every Time:

  1. Buy quality, organic tofu.  Why organic? Read my Guide to Choosing Organic Foods here. 
  2. Start with the tofu frozen
  3. Boil it as instructed
  4. Don’t skip the corn starch!
  5. Season it.  Never eat it plain. Naked tofu is just gross.  Don’t do that.
  6. Follow my steps.  First pan fry.  Then bake.
  7. Be open to the new texture and flavor if you are new to this.

Ingredients
  • 1 package Organic Frozen Tofu
  • 1 tbsp Tamarind Concentrate
  • 2 tbsp Corn Starch
  • 2 tbsp Soy Sauce I use Bragg's Liquid Aminos (gluten free)
  • 1 tbsp Rice Vinegar
  • 2 tsp Salt
  • 1-2 tbsp Sesame Oil
  • 2 tbsp Chili Garlic Paste

Instructions
  1. Place tofu and salt in a medium pot and fill pot with water enough to cover the tofu. Heat tofu until boiling. Once boiling, cook for one minute and remove from heat. Drain water from pot. Don't skip this step!
  2. Preheat oven to 375 degrees
  3. Place tofu on a cutting board and press water out by covering tofu with a towel and pressing down, water will squeeze out.
  4. Cut tofu as depicted in this photo. First by slicing the tofu long-length-wise and then in half and then in three even rectangles.

  5. Place tofu in a medium bowl with a lid or resealable plastic bag and add soy sauce, tamarind concentrate, rice wine vinegar, and chili garlic sauce, cover, and toss tofu to coat evenly by shaking. Once coated, add cornstarch and shake again until evenly coated *don't skip the corn starch*
  6. Heat oil in a deep skillet, once hot add tofu and pan fry until golden brown, about 3 minutes each side. Add additional oil if tofu is sticking to pan.
  7. Remove from heat and transfer tofu to a baking sheet in a single layer. Bake in 375 degree oven for 5 minutes. Remove from oven, raise heat to 425, turn each piece of tofu to its other side, place back in oven and bake in 425 degree oven for an additional 5 minutes.
  8. Remove from oven and eat or serve! Pair with broccoli, rice, or eat on its own. Enjoy!
