Quick Easy Vegetarian Breakfast: Quinoa Apple Cinnamon Bowl

Mornings are busy enough for anyone.  Who has time to think about something that is healthy, filling, easy, quick, and tastes good??? This breakfast quinoa bowl is the solution.

Quinoa is so easy to make ahead on an evening or weekend that you are not so busy and you can have it handy for when you are busy.  For breakfast quinoa, make sure you make the quinoa without broth or salt so that you can enjoy the breakfast flavors such as the apple cinnamon we are using here. For dinner quinoa recipes, we want to use broth to cook the quinoa but not for breakfast. If you are completely opposed to a breakfast quinoa bowl make it a breakfast oatmeal bowl and you can flavor it with apple cinnamon just the way this recipe shows.

First we start with fresh fall apples and then choose your toppings.

Apple Cinnamon + Walnuts

My favorite is to add walnuts to my apple cinnamon flavor and that is it.  BUT you can jazz up your quinoa breakfast bowl with lots of options: raisins, honey, pecans, bananas, so many options!

Apple Cinnamon Breakfast Quinoa Bowl

The key to this breakfast quinoa bowl tasting like a hot apple pie but not actually costing you the time, fat, and calories of an apple pie is the combination of milk, quinoa, and just a small amount of brown sugar heated to perfection before you add the apple cinnamon. Any milk will do: rice milk, soy, dairy, almond or coconut.

Quinoa for Breakfast? YES!

This recipe makes enough for one bowl but once the smell of hot apple pie fills your house you might be making more! So, just double the recipe and change up the toppings.  On the go in the morning? Make the quinoa and milk mixture ahead of time, store it in a jar and in the morning add the apple cinnamon, grab a spoon and go!

  • 1/2 cup cooked quinoa
  • 1/2 cup Almond Milk or any milk will do: organic low fat, coconut, soy, rice
  • 1 tsp ground cinnamon
  • 1 chopped or shredded apple I use 1/2 of a green and 1/2 of a red to add flavor

Instructions
  1. Combined cooked quinoa, milk, and brown sugar in a small pot. Cook over medium heat for 3 minutes stirring constantly until combined and heated through. Transfer to bowl
  2. Add cinnamon and apples and stir.
  3. Top with toppings and enjoy or transfer to a jar and take with you for a breakfast on the go!
Recipe Notes

Notes:

  • Make quinoa according to package directions with only water, do not use broth or salt
  • Can substitute cooked oats in place of quinoa
  • Can substitute apple sauce in place of brown sugar
  • Recipe is for one breakfast but can be doubled or tripled or made ahead.  If making ahead do not add apples and cinnamon until ready to eat.
