Apple Crisp: Easy and Healthy

When I think of apple crisp I think of a rich dessert full of butter, sugar, and lots of other things that make it mysteriously delicious. Today, apple crisp gets a makeover.

Apples baked to perfection in small portions … easy!

What do I do with apple crisp? Layer it will my yogurt! I make a fresh batch of yogurt weekly to have around for breakfasts or to add a clean protein to our meals.  If you don’t know how … start here to make your own! Sometimes yogurt and yogurt toppings can get boring and when you add in the stuff that tastes good you get a whole lot of sugars and calories you just don’t need.  Today we are topping our yogurt with this fabulous apple crisp.

Homemade Apple Crisp No Butter No Added Sugar GF Vegan Delicious Easy

Dessert, snack, breakfast, layered in yogurt, topped with ice cream …

This apple crisp combines oat flour, GF oats, cinnamon, and apples.  We then sweeten it with honey or maple syrup if going vegan. The recipe makes 2 ramikens so you don’t have a lot of leftovers (really good if you are worried about eating all of it yourself! Now you can!!). BUT make more if you want to share or store them in the refrigerator for quick snacks or breakfasts.

  • 2 apples Honey Crisp work best to increase sweetness without adding sugar
  • 1/4 cup Organic Old-Fashioned Gluten Free Rolled Oats
  • 1/4 cup Oat Flour
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg optional
  • 1/4 tsp cardamaon optional
  • 2-3 tbsp honey or maple syrup
  • 1 tsp melted coconut oil

Instructions
  1. Preheat oven to 350 degrees
  2. Core apples and cut into cubes
  3. Sprinkle apples with cinnamon and set aside
  4. Grease 2 ramekins or mini loaf pan
  5. In a small bowl whisk together oats, flour, and optional nutmeg and cardamom

  6. Drizzle in honey or syrup until small clumps form (like mine in picture). I use my hands to mix, add in drops of melted coconut oil if needed to moisten

  7. Pour apples in ramekins and top with oat mixture
  8. Cover with foil and cook for 30 minutes, remove foil, increase heat to 425 and bake an additional 5 minutes. Remember, oven times vary!
  9. Remove from oven and allow to cool before eating or serving. Pour on top of yogurt or steel cut oats -or- add a dollop of coconut whipped cream or yogurt or ice cream. Enjoy!
Recipe Notes

Options:

  • like it sweeter? add 2 tbsp brown sugar
  • need more spice, add 1/4 tsp of apple pie spice or an additional 1/4 tsp cinnamon
  • be sure to use syrup if vegan and GF oats if GF
