Apples Sliced and Topped with Almond Butter and Chocolate Chips

Autumn is here and we have had the pumpkin thing going on around here at myvegetarianfamily.com.  Everything seems to be orange including pumpkin puree, pumpkin smoothies, pumpkin banana muffins, and even pumpkin overnight oats.  The other three vegetarians that live with me have grown to love everything pumpkin too over the last few weeks.

BUT after I saw all of the beautiful, colorful organic apples in the grocery store yesterday, I couldn’t help but start dreaming about the many apple-licious things I could make and share with everyone! Remember, apples are part of the dirty dozen so choose your organic produce wisely.

So happy to share my first apple recipe of autumn!

After school, breakfast, lunch box, pre-workout, post-workout, brunch, snack, party … prefect for any time!

Apples and nut butter are perfect for the vegetarian trying to lose weight too.  High in fiber, high in protein, packed with healthy fat and lots of nutrients! To top it off, we sprinkle on these tiny little dairy, soy, and nut free chocolate chips and coconut if you love coconut!

  • 1 tbsp shredded coconut optional

Instructions
  1. Core and slice apple, arrange on cutting board or plate
  2. Spread almond butter evenly on each slice
  3. Sprinkle toppings evenly on each slice
  4. Serve (or eat) immediately or place in airtight glass container for later or for lunchbox!
Recipe Notes

Optional toppings:

  • crushed walnuts, peanuts, cashews, or pecans
  • sliced strawberries
  • sliced bananas
  • drizzle with honey
  • raisins
  • cranberries

Other possibilities:

  • cup apple ring into 4 quarters and fold into a gluten free or whole grain wrap to make a sandwich
  • cut apple ring into 8 pieces for an oatmeal or yogurt topping

      You can also top these with raisins, strawberries, or pecans. Lots of variety. Thanks for sharing!
