Roasted Vegetable Pizza With Easy No-Rise Whole Wheat Crust

So, I used to be what I call a recipe failure.  I would search Pinterest for the perfect recipe, gather everything I needed, follow every step exactly as written, and it would NEVER turn out like the photo.  Recipe failure.  This was especially true with pizza.  It was a daunting task for me to make homemade pizza.  So, I never did.  I searched for healthy alternatives, we ate pizza out.  Then one day, I decided I had enough.  We ate a lot of pizza that week.  Some good, some bad.  In the end, I figured it out.  Now, I am here to share it with you.  No recipe failures.

This pizza is great.  You do not need to plan ahead and make the dough the day before or that morning.  No waiting for it to rise and wondering if you got the yeast just right.  AND it is made with whole wheat four.

I must warn you … if your family isn’t used to whole wheat anything … make this recipe with one cup organic white flour and one cup wheat … ease them into the whole wheat thing.

Whole Wheat Pizza Dough: No Rise

No rise, yes, it is true.  Mix, knead, bake.  That’s it.  Don’t get super lazy and skip the kneading … anyway it burns a few calories to knead dough for four minutes so it is worth it.

Oven Roasted Vegetables

I will always share my recipe tips for success.  Follow my instructions on these veggies.  Add others if you like (mushrooms, broccoli, cauliflower).  BUT use good quality olive oil and don’t skip the garlic or the onions.  Coat every little veggie with oil and pieces to give them lots of flavor.

Pizza night … no recipe failures …

So you don’t want to make the dough (or have time or feel like going to the grocery store), use a pre-made dough but watch the ingredients are all recognizable and you know what you are eating!

OR – you don’t want to top your fabulous dough with all these veggies? Just put marinara sauce and cheese!

OR – you are vegan? Great! Substitute vegan cheese or leave the cheese off and add more veggie variety and some olives!

Easy Roasted Vegetable Pizza
Oven-Roasted vegetables with olive oil and spices browned in the oven to perfection and layered with cheese over whole wheat pizza crust. This dough is healthy, whole grain, no-rise pizza dough. Roasted Vegetables
  • 1 yellow zucchini sliced thin
  • 1 green zucchini sliced thin
  • 1 red onion sliced
  • 10 cloves Fresh Garlic
  • 1 tbsp olive oil
  • 1/2 tsp coarse salt
  • 1/2 tsp Ground Black Pepper
  • 1 tsp italian seasoning any combination of oregano, basil, thyme will do
Whole Wheat Pizza Dough
  • 2 cups organic whole wheat flour
  • 1 1/4 oz package active dry yeast
  • 1 tsp organic cane sugar
  • 3/4 tsp Salt
  • 2/3 cup warm water not too hot but not too cold, approx 120 degrees
  • 3 tbsp olive oil
For the Pizza
  • 1 cup organic cheese of your choice mozzarella, parmesan, vegan substitute
  • 1-2 tsp Red Pepper Flakes

Instructions
Oven Roasted Vegetables
  1. Heat oven to 425 degrees
  2. Place vegetables in a large bowl, drizzle with olive oil until all veggies are coated, add all spices and mix
  3. Spread evenly on baking sheet

  4. Roast in 425 degree oven for 20-25 minutes until golden brown and the little edges are crisped

Whole Wheat Pizza Dough
  1. In a large bowl combine 1 cup of flour, yeast, sugar, salt, mix until combined then add in oil and stir for about a minute until all combined
  2. Gradually add in the other cup of flour, I use my hands here to mix together until it becomes a soft ball of dough

  3. On a clean, floured surface, knead dough for 4 minutes until smooth being sure to turn and combine all ingredients multiple times
  4. Roll dough out onto a greased pan (I use the pan the veggies just came out of) and be sure to brush BOTH sides of the dough with olive oil
  5. Bake in 425 degree oven without toppings for 10 minutes, checking after 5 minutes, only until slightly golden brown, all ovens are different!
Pizza
  1. Spread the cheese evenly over dough, return to 425 degree oven for 3-4 minutes or until cheese melts
  2. Add veggies on top of cheese, sprinkle with additional parmesan cheese and roasted red pepper flakes to taste. Return to oven for an additional 5-7 minutes or until golden brown. Remove from oven, cut and serve. Enjoy!
