Almond Butter Power Bites:

One Bowl, 4-Ingredient, Vegan, Gluten-Free

No other words used to describe these … bite-size treasures.  Measure out 4 ingredients, mix them in a bowl, roll out 24 round power bites.

This blog was created to help people understand that being vegetarian can be easy and healthy.  Even if you have a family.  Even if you are on the go.  Even if you live alone.  Even if you are so busy you can’t even imagine making a meal … or even a snack. This recipe gives you an option to take a few ingredients and make a big batch and store it in your freezer and whenever you need it you have a healthy, protein-filled, vegetarian snack or breakfast or lunch.  Print this one out, pin it, save it, commit it to memory but use it.

Don’t like vegan chocolate chips? OK, add peanuts or raisins or dried cranberries.  Don’t have almond butter? OK, use peanut butter.  Want to up the healthy-food-content-level? OK, add hemp seeds or flax or chia seeds.  Don’t have maple syrup and you aren’t vegan? OK, use honey.  Get it?? OK, good, now go pin it or print it and go make some power bites!

  • 3/4 cup Almond Butter I use Barney Butter brand
  • 1/4 cup US Maple Syrup works with honey too if not vegan
  • 1/3 cup gluten-free chocolate chips I use Enjoy Life brand

Instructions
  1. Measure out all ingredients
  2. Place Almond butter in microwave for 15 seconds
  3. Mix all ingredients together in a large bowl, stir to combine and coat all of the oats with the almond butter and syrup
  4. Roll into 24 balls
  5. Optional: Place on parchment paper lined tray and place in freezer for 30 minutes prior to serving/eating
  6. Store leftovers (if you have any) in a sealed glass container in freezer or refrigerator
