Pumpkin, Chia Seed, Cinnamon Overnight Oats

It is no wonder that overnight oats are so popular.  You put all of your favorite ingredients in a jar, go to bed, and wake up to a perfect, nutritious, healthy, and delicious breakfast.  Easy and vegetarian! Yeah!

Since we are in pumpkin mode here at myvegetarianfamily.com we are making our overnight oats this week with our homemade pumpkin puree that we made plenty of and have leftovers just waiting in our refrigerator or freezer … if you don’t … a can works here too!

As pictured, I doubled the recipe to feed two hungry vegetarians, used almond milk, and topped with walnuts and cinnamon.  Any milk will work in this recipe … organic whole or reduced fat milk, coconut milk, almond milk, or organic soy milk.

Simply layer all of the ingredients in a jar, swirl around to make sure it is all combined, and place in refrigerator overnight.  In the morning you can add liquid if it is too thick, add toppings of walnuts, sliced almonds, shredded coconut, raisins, bananas, cinnamon, nutmeg, sliced bananas, pumpkin pie spice, or all of the above.  Eat it right out of the jar or pour into a bowl.
