Pumpkin Smoothie Recipe:

Pumpkin + Cinnamon  + Vanilla Yogurt

We have already established that I love fall and all things pumpkin.  Hopefully by now you are joining my love of pumpkin and have a jar of vibrant orange homemade pumpkin puree in a cute jar in your refrigerator just waiting to be used.  If not, a can will definitely do because you do not want to miss the smoothie for your first taste of pumpkin pie this fall.

This smoothie is creamy, delicious, healthy, flavorful, easy, packed with vitamins and protein, and best of all … you can customize it! Need more protein, add protein powder, don’t have pumpkin pie spice, add more cinnamon, want it sweeter, add maple syrup.  See … easy!

Layer all of the ingredients into your Vitamix (or other blender) listed in the order on the ingredient list and blend! Easy vegetarian breakfast, lunch or you can make a second batch and pour it in popsicle molds for a frozen treat later!

  • 1 container (150g) Siggi's Icelandic-Style Vanilla Yogurt
  • 1/4 tsp ground cinnamon
  • 1/4 tsp pumpkin pie spice
  • 1/4 tsp vanilla
  • 1/2 cup pumpkin puree
  • 1 cup ice

Instructions
  1. Add all ingredients into Vitamix or blender
  2. Set Vitamix to "smoothie" and blend until it turns off. OR blend in blender on high 2 minutes or until all ingredients are combined and smooth. Add water or milk if too thick to blend. Add more ice to make a thicker consistency.
  3. Pour into a glass, add a cute straw, top with extra pumpkin, cinnamon, or bananas, and drink.
  4. Can also be placed in popsicle molds to enjoy as a frozen treat. Double the recipe to share some or save some!
Recipe Notes

optional add-ins:

  • organic vanilla protein powder
  • 1 tbsp maple syrup for additional sweetness
  • Plain homemade yogurt can be substituted but will not yield same consistency or flavor, add additional ice and 1/2 tsp vanilla
  • If you do not have pumpkin pie spice add additional 1/4 tsp cinnamon and nutmeg
