This recipe is perfect for when you are hungry for a crunchy snack, after school, while watching football, or as an addition to a lazy Sunday brunch, even on top of a salad instead of croutons. The possibilities are endless. I have one teenage vegetarian here that waits by the oven for these to turn brown so he can eat them immediately.
How to make them perfectly crunchy every time:
dry the peas first before applying the oil and spices, follow the baking process in the recipe
eat them right away, they lose their crunch if you wait
if you have to pre-cook these, toss them back in the oven under a low broiler for 2-3 minutes to get the crunch back
don’t like garlic or cayenne? try turmeric or onion or cumin or even cinnamon … can’t mess these little guys up with any spice, just throw something different on there each time to change it up
don’t have dry beans but you have cans, use them!

2cupsDried Chickpeas (Garbanzo Beans)or 2 cans of chickpeas
8cupsWaterfor cooking dried garbanzo beans
1-2tspGarlic Powderto taste
1-2tspchili powder or cayenne pepperto taste
1 1/2tbspolive oil

Cooking Dried Garbanzo Beans in Instant Pot
Rinse chickpeas in a strainer under cool water for 30 seconds
Place chickpeas, water, and 1 tsp salt in Instant Pot, set to "Beans" for 30 minutes, release the steam when time is up and drain out water.
If Using Canned Garbanzo Beans
Drain water from cans and rinse thoroughly
Roasting Chickpeas in Oven
Heat oven to 375 degrees
Place chickpeas in a single layer on baking sheet
Bake for 15 minutes and remove from oven
Transfer chickpeas to a bowl and add olive oil, salt, garlic powder, and cayenne or chili pepper powder (to taste). Stir until each tiny little pea is coated with oil and seasoning.
Place chickpeas back on baking sheet and place in 375 degree oven for 20-25 minutes or until golden brown. *Oven times vary* Watch your peas and remove from oven when golden brown, taste one for crunch and they are done. I tested these in 2 different ovens and they required 2 different cook times 5 minutes apart.
